Happy Wednesday! Welcome back to another What I ate Wednesday! Hosted by Jenn over at Peas and Crayons. This month is about loving our veggies so what a great excuse to get in more vegetables. Here are some of my favorite meals from the past week!

Whey protein and chocolate Zico.
Lately I’ve been on a salad kick with lots of fruit in them for lunches.

Baby spinach, strawberries, oranges, quinoa, and almonds.

Spinach, grapefruit, and chicken. Sweet potato fries on the side.

Kind Bar for Snacks.

Quinoa, tomatoes, spinach, and turkey.

And gluten free beef stew to warm me up!
In other news we’re still facing piles of snow in Boston and I’m not thrilled about it!

At least one of us is ready for the cold!

Oh these muffins and the sweet potato fries look so good! And I am jealous on Sophie’s happiness about the snow. I can not stand it anymore – how many days until summer again – or at least spring?

And of all your foods I’d pick the beef stew! I’m freezing lately here.
I’m a fan of all vegetables. Anything works for me. Just love that crunch. However anything with avocado is the best combination. So here I picked – avocado salads!
I’ve been freezing too so I’m trying to go for warm and filling foods!
I made a monster salad the other night that combined raw and roasted veggies . . . it was so good! The two textures/temperatures of the food made it really satisfying.
I love adding cooked veggies in my salads! Something about it makes it more satisfying to me!
I was just thinking last night that I need to make more salads. Not boring salads though. I was thinking of massaged kale and mandarine oranges… Something like that. What do you think of the chocolate Zico?
Sounds amazing! I love adding fruit in my salads! I love the chocolate zico. I don’t have it all the time cause of the sugar but every once in a while I’ll get it! It reminds me of chocolate milk lol!
I can’t wait to try those muffins! Fruit makes in salad better, in my opinion and Kind bars are awesome! Happy WIAW, Danielle!

I am excited for the protein muffin recipe. That sounds like a perfect quick and easy breakfast or snack recipe!
My most veggie-ful meal this week was spaghetti squash “pasta” with sauce, zucchini, broccoli, peppers, and onions, and butternut squash on the side…veggie overload?? Never!
All your quinoa meals look so good. I need to start using quinoa a bit more but I get impatient with how long it takes to cook!
Awww I just adore Sophie, she’s so cute. Our dog loves the snow and just bounds through it like a crazy pooch. I love Sophie’s little jacket as well, bless her.
I always cook a big batch of quinoa on Sunday so that I don’t have to cook it during the week

i want summer too! I can’t wait! The other day i tried a “Veggie chili” recipe, it was a vegan chili that looked a bit like a soup and it was SO delicious! I’m definitely going to try this again!

I’ve been doing way better with veggies this week since I’ve been trying to base all of our dinners around greens — “power bowls”!!

Eek! Your delicious looking veggie meals put me to shame – my diet has been seriously lacking in the veggie department lately, but I blame that on winter and the fact that my stomach doesn’t like them. I still try to get in a salad every day, but calling it a salad is being pretty generous because, really, it’s just a bunch of basic veggies thrown together in a bowl
It’s all about finding a balance that works for you! I’m not the biggest veggie fan myself!

The best veggie-packed meal I had this week was pork tenderloin with a beet and carrot wheatberry salad and massaged kale on the side!

Ooh, what are your thoughts about chocolate Zico? I’ve been thinking about buying a carton, but always chicken out because I’m not a huge fan of the plain flavor. I tend to love chocolate everything, though, so I’m guessing I’d probably love it.
The best veggie-packed meal was probably my dinner tonight. I made an egg scramble with mushrooms, spinach, garlic and goat cheese, and enjoyed a baked sweet potato and an arugula/truffle oil salad alongside it. I think I may have packed four servings of vegetables onto my plate!
I don’t love the plain coconut water either but the chocolate is amazing! Definitely give it a try!
