Happy Wednesday! Welcome back to another What I ate Wednesday! Hosted by Jenn over at Peas and Crayons. I’m sharing some of my favorite meals from last week. As usual I’m a constant work in progress on getting in more veggies and this week was no different. Here are some of my favorites from the week. Keep in mind I never post a full day of meals, these are just some random favorites from the week.
My weekly meal prep has been a lifesaver this week. I’ve had not much desire to cook anything so the convenience of having everything done has been even better than usual! A lot of these are upcoming recipes to post too so keep your eyes out for them coming up!
Spicy spaghetti squash and veggies. #Plantpower approved
Lean ground meat, zucchini, and bell pepper. Some quinoa is hidden underneath.
Greek yogurt with peanut flour and blueberries.
Paleo egg muffins for breakfast.
Spicy sweet potatoes, black beans, veggies, and goat cheese.
Dinner. More sweet potatoes, black beans, and veggies with spinach salad on the side.
