What I Ate Wednesday

Happy Wednesday! Welcome back to another What I ate Wednesday! Hosted by Jenn over at Peas and Crayons. I’m sharing some of my favorite meals from last week. As usual I’m a constant work in progress on getting in more veggies and this week was no different. Here are some of my favorites from the week. Keep in mind I never post a full day of meals, these are just some random favorites from the week.

My weekly meal prep has been a lifesaver this week. I’ve had not much desire to cook anything so the convenience of having everything done has been even better than usual! A lot of these are upcoming recipes to post too so keep your eyes out for them coming up!

Lean ground meat, zucchini, and bell pepper. Some quinoa is hidden underneath.

these spicy sweet potatoes look delish! Yesterday i made “Espresso oats” (oats cooked in water, espresso powder, coconut milk & vanilla stevia) and it was soooo good that i made it again this morning and i guess it’s gonna become one of my breakfast’s staple!!

Oh everything looks so good!! We do not have greek yogurt here, it’s so sad!! I am with you on the meal prep. I never feel like cooking during the week, if I wouldn’t prep I would be a take away junkie :-)

Thanks Kristen! It’s spinach, grapefruit, avocado, chicken, and lime! I’ll be posting a recipe for it soon!

Mmm greek yogurt with peanut flour and blueberries. Isn’t it the best treat ever?
Your foods look super healthy and delish!
My best thing – chanterelle mushroom/asparagus stew – not my idea though ;)

I really need to start adding nut butter to my Greek yogurt. It sounds so tasty! Do you add it to plain Greek yogurt or to vanilla Greek yogurt?

I love adding peanut flour to greek yogurt–and then dipping apples into it. Delicious! :)

Loving the look of the spicy sweet potatoes! But then again, everything looks delicious. I’d have to say that my favorite meal from this week has been my mom’s slow cooker stew… There’s seriously nothing more comforting than a warm bowl of Mom’s cooking :)

Mmm, the last two dishes in particular look divine, I want to see that egg muffin recipe. I’m loving all the savory muffins I’ve been seeing on blogs. And the goat cheese with sweet potato – DEAD!
So far the best thing I ate all week was the salad I had today for lunch because it contained my loves, roasted Brussels. Those ALWAYS win.

That combo of lean ground meat and vegetables is really simple but seems totally satisfying. I can’t have grains, but I may have to try out that combo with some cauliflower rice. Thanks for the idea!

I love the combo of sweet potato and black beans together! Especially with some guacamole in the mix. :D

The best thing I ate all week was squash lasagna made with quinoa lasagna noodles topped with lots of mozzarella cheese at work today!
