What I Ate Wednesday

by danielle on January 9, 2013

Happy Wednesday! Welcome back to another What I ate Wednesday! Hosted by Jenn over at Peas and Crayons.

Today I’m doing  things a little bit different. I’m showing you my weekly meal prep and how it works for my meals for the week. You know I’m a huge fan of making things ahead. Because I hate cooking during the week. Bottom line: if I don’t cook it ahead I won’t end up eating it or eating healthy at all!

mealprep15

Asparagus with lemon. Great for lunches and dinners. I just used 1 tsp. olive oil and sauteed the asparagus over low heat with lemon juice in the pan.

DSCN1899

Spicy chicken, baby spinach, and bell pepper. My trick was to use a ton of spinach and it made a bunch for lunches or dinners throughout the week.

DSCN1904

Lean ground meat for lunches, dinners, or snacks. I also steamed snap peas ahead so I know I have to eat them!

DSCN1907

Spaghetti squash with crushed, tomatoes, zucchini and basil. I also prepped turkey meatballs to go with this.

DSCN1906

Also on hand is turkey and baby carrots for snacks.

DSCN1910
and finally eggs, apples, and pure bars for breakfast.

Hope you enjoyed a look into my week!

This is the perfect meal prep!! I am totally the same, if I don’t prep it all beforehand I end up eating crab :-) And I love when I have my good meals on hand.

I love it too! I need to plan otherwise it’s all downhill ;)

Love that post! How long do you cook the sauteed asparagus? I never thought of doing them that way, must totally try it!

Reply

danielle January 9, 2013 at 1:40 pm

I cooked it for about 10 minutes with a lid on it for half the time. Super easy.

Nadja January 9, 2013 at 4:31 pm

What a fun and unique post. Love the added lemon to your asparagus

It’s my favorite combo!

You really are creative with your meals. Plus everything is simple. You don’t use weird spices or an ingredients hard to find. Most of it you probably already have :)

Reply

danielle January 9, 2013 at 1:40 pm

I’m definitely not fancy at all. Simple is best for me!

Your meal prep is awesome! I try to prep some for the week, but after I go to the grocery store over the weekend sometimes there’s no room in the fridge….. I seriously need a bigger fridge!!

Reply

danielle January 9, 2013 at 1:41 pm

I do too! That’s why I cook it ahead sometimes cause it takes up less space!

Linz @ Itz Linz January 9, 2013 at 12:49 pm

Mmm asparagus!! Itz been awhile since I’ve had some – I need to change that! Meal prep is SO important!!

I agree meal prep is key!

Gosh you’re so organised! I usually prepare my lunch the night before at best or in the morning at worst. But dinner I quite enjoy making in the evening, I love cooking and I find it a good time to relax and unwind.
All your meals look wonderfully colourful and varied :)

Reply

danielle January 9, 2013 at 1:42 pm

Definitely agree it’s so relaxing.

You are so good at meal prepping! When I have really busy weeks I do a lot of meal prep, but if I don’t have a lot going on then I prefer to just cook something different each day. I like spending my down time cooking!

Reply

danielle January 9, 2013 at 1:42 pm

I agree with that. I like choosing what I’m going to have the day of too!

Reply

Hannah @ CleanEatingVeggieGirl January 9, 2013 at 1:33 pm

I have actually never sauteed asparagus, only roasted it. I will have to try that sometime!

How are those Pure bars? I just recently bought one from Whole Foods (that same flavor), but have yet to try it. Are they tasty?? ;)

Reply

danielle January 9, 2013 at 1:43 pm

I love the pure bars! They’re similar to a Lara bar!

Reply

Hannah @ CleanEatingVeggieGirl January 9, 2013 at 6:14 pm

I should definitely love them then because I am a big fan of Larabars!

Reply

danielle January 9, 2013 at 11:11 pm

You will! the cherry cashew and chocolate brownie are my favorites!

Laura @ Sprint 2 the Table January 9, 2013 at 1:37 pm

I said today on my post too – meal prep is the #1 thing you can do to help yourself eat clean. I’d be so lost without it! Those snap peas look fantastic… adding that to my list next week!

Reply

danielle January 9, 2013 at 1:43 pm

They’re so easy to prep ahead too!

This is great. A lot of bloggers talk about meal planning, but actually seeing what it looks like helps a lot. Thanks!

I’m the same.. I’ve come to realize that if I don’t plan, I will fail! I’m actually running out and have 2 days left of the week so I’ll need to figure out something tonight so that I stay on track the rest of the week. You’ve definitely just inspired me to sautee up some asparagus, I’d never thought to use lemon juice before.. sounds so good!

Reply

danielle January 9, 2013 at 5:45 pm

Yay! So happy I inspired you with my asparagus. It’s really good!

Reply

Lisa January 9, 2013 at 4:09 pm

Yay thanks for doing this Danielle! I always admire how organized and prepared you are for the upcoming week! I need to try out your tips so I’m not always scrounging around like a crazy person when I get hungry hah. Isn’t spaghetti squash awesome, I love how versatile it is!

ooo yum asparagus :) I had spaghetti squash a couple weeks ago, I wasn’t such a fan, but then again I haven’t tried it with a sauce lol

Reply

danielle January 9, 2013 at 5:46 pm

I love spaghetti squash but it’s definitely plain without sauce. I’d try it again!

I love spaghetti squash. Sometimes I think the leftovers are better than the day it’s made! Happy WIAW! :-)

Reply

danielle January 9, 2013 at 11:12 pm

I agree with you I always have it left over!

Reply

Amanda @.running with spoons. January 9, 2013 at 6:39 pm

So incredibly in awe of how organized you are. I used to plan meals in advance, but when it actually came to prepping them? Not really. The only thing I regularly have on hand is baked chicken, and as long as I have a decent sized tub of that, I can usually come up with something in a pinch. And if not, there’s always cereal, right? ;)

Caitlin January 9, 2013 at 7:44 pm

So almost ALL of this looks amazing to me! I love asparagus so very much, and having all that spaghetti squash ready to go is great because making one can be a pain, or so I’ve found. Mmm I ate turkey meatballs for dinner last night!

Reply

danielle January 9, 2013 at 11:13 pm

I love asparagus and turkey meatballs. and I agree on the spaghetti squash, such a pain to make unless you cook it ahead. It takes so long!

I love the whole idea of prepping food for the whole week at one time. I do this with lunches, but not really with dinners. Lots of good ideas here!

danielle January 9, 2013 at 11:13 pm

Thanks Lisa!

Melissa @ Freeing Imperfections January 9, 2013 at 8:32 pm

Prepping for the week is sooo what I need to be doing. What a great idea! I am the same exact way: if I don’t prep (or at least know what I’m eating in advance), I fail to eat healthy. Great reminder!

Reply

danielle January 9, 2013 at 11:13 pm

glad you liked the reminder Melissa!

I love how organized you are! I need to prep for the week… I tell you this weekly… maybe one day I’ll actually do it!

I know you’ll get there!!

Reply

Corrie Anne January 10, 2013 at 5:53 am

So smart to do all the planning ahead. I need to be better about planning lunches for myself since Kevin usually gets all the good leftovers since I’m home all day!

Reply

danielle January 10, 2013 at 1:01 pm

hahaha well you just need to save some for yourself too ;)

Sara @ Nourish and Flourish January 10, 2013 at 6:27 am

Ooh, I love the idea of coupling a Pure Bar with eggs for breakfast! What a great way to squash those morning chocolate cravings! (And there are *always* morning chocolate cravings over here ;) ).

Can you come do my meal prep for me? I’ll pay you in Paleo cookies! I’m always so impressed, Danielle! You’re an inspiration. Some day I’ll have this down as well as you… Hopefully! ;) xoxo

danielle January 10, 2013 at 4:37 pm

I always have morning chocolate cravings too although I guess they don’t every go away so they’re not just “morning” cravings! You will get your prep down! When we’re both in California we’ll have to set up a time to have a prep date ;)

Great post! I also love to spend my Sundays prepping for the week. Love egg & veggie quiche or egg ‘muffins’; a protein for the week; veggies (or quick salads). I love spaghetti squash but how much do you prep for 1 serving? Half the squash or a quarter of it? I feel I could eat so much of it and not get full!

Reply

danielle January 26, 2013 at 6:17 pm

Sounds like we are so similar. I usually cook all of the squash on Sunday but usually eat around 1 or 2 cups at a time. It is a veggie though so it would be really hard to eat too much of it! Just listen to your body and stop when you’re satisfied and you should be good to go!
