Happy Wednesday! Welcome back to another What I ate Wednesday! Hosted by Jenn over at Peas and Crayons.
Today I’m doing things a little bit different. I’m showing you my weekly meal prep and how it works for my meals for the week. You know I’m a huge fan of making things ahead. Because I hate cooking during the week. Bottom line: if I don’t cook it ahead I won’t end up eating it or eating healthy at all!
Asparagus with lemon. Great for lunches and dinners. I just used 1 tsp. olive oil and sauteed the asparagus over low heat with lemon juice in the pan.
Spicy chicken, baby spinach, and bell pepper. My trick was to use a ton of spinach and it made a bunch for lunches or dinners throughout the week.
Lean ground meat for lunches, dinners, or snacks. I also steamed snap peas ahead so I know I have to eat them!
Spaghetti squash with crushed, tomatoes, zucchini and basil. I also prepped turkey meatballs to go with this.
Also on hand is turkey and baby carrots for snacks.

and finally eggs, apples, and pure bars for breakfast.

This is the perfect meal prep!! I am totally the same, if I don’t prep it all beforehand I end up eating crab
And I love when I have my good meals on hand.

Love that post! How long do you cook the sauteed asparagus? I never thought of doing them that way, must totally try it!
I cooked it for about 10 minutes with a lid on it for half the time. Super easy.

You really are creative with your meals. Plus everything is simple. You don’t use weird spices or an ingredients hard to find. Most of it you probably already have

Your meal prep is awesome! I try to prep some for the week, but after I go to the grocery store over the weekend sometimes there’s no room in the fridge….. I seriously need a bigger fridge!!
I do too! That’s why I cook it ahead sometimes cause it takes up less space!

Gosh you’re so organised! I usually prepare my lunch the night before at best or in the morning at worst. But dinner I quite enjoy making in the evening, I love cooking and I find it a good time to relax and unwind.

You are so good at meal prepping! When I have really busy weeks I do a lot of meal prep, but if I don’t have a lot going on then I prefer to just cook something different each day. I like spending my down time cooking!
I agree with that. I like choosing what I’m going to have the day of too!
I have actually never sauteed asparagus, only roasted it. I will have to try that sometime!
How are those Pure bars? I just recently bought one from Whole Foods (that same flavor), but have yet to try it. Are they tasty??

I said today on my post too – meal prep is the #1 thing you can do to help yourself eat clean. I’d be so lost without it! Those snap peas look fantastic… adding that to my list next week!

I’m the same.. I’ve come to realize that if I don’t plan, I will fail! I’m actually running out and have 2 days left of the week so I’ll need to figure out something tonight so that I stay on track the rest of the week. You’ve definitely just inspired me to sautee up some asparagus, I’d never thought to use lemon juice before.. sounds so good!

I had spaghetti squash a couple weeks ago, I wasn’t such a fan, but then again I haven’t tried it with a sauce lol
I love spaghetti squash but it’s definitely plain without sauce. I’d try it again!

They’re all so colorful, which is wonderful because colorful (real) foods = HEALTHY!!! (I ain’t talking about skittles here lol)

So incredibly in awe of how organized you are. I used to plan meals in advance, but when it actually came to prepping them? Not really. The only thing I regularly have on hand is baked chicken, and as long as I have a decent sized tub of that, I can usually come up with something in a pinch. And if not, there’s always cereal, right?
So almost ALL of this looks amazing to me! I love asparagus so very much, and having all that spaghetti squash ready to go is great because making one can be a pain, or so I’ve found. Mmm I ate turkey meatballs for dinner last night!
I love asparagus and turkey meatballs. and I agree on the spaghetti squash, such a pain to make unless you cook it ahead. It takes so long!
I love the whole idea of prepping food for the whole week at one time. I do this with lunches, but not really with dinners. Lots of good ideas here!

Prepping for the week is sooo what I need to be doing. What a great idea! I am the same exact way: if I don’t prep (or at least know what I’m eating in advance), I fail to eat healthy. Great reminder!

I always have morning chocolate cravings too although I guess they don’t every go away so they’re not just “morning” cravings! You will get your prep down! When we’re both in California we’ll have to set up a time to have a prep date
Great post! I also love to spend my Sundays prepping for the week. Love egg & veggie quiche or egg ‘muffins’; a protein for the week; veggies (or quick salads). I love spaghetti squash but how much do you prep for 1 serving? Half the squash or a quarter of it? I feel I could eat so much of it and not get full!
Sounds like we are so similar. I usually cook all of the squash on Sunday but usually eat around 1 or 2 cups at a time. It is a veggie though so it would be really hard to eat too much of it! Just listen to your body and stop when you’re satisfied and you should be good to go!
