After a bit of a break last week to share my Christmas with you I am back with some meals from my week. Thanks goodness for Instagram. I’ve been terrible about capturing pictures of my meals lately so this week you are getting my meals from the week courtesy of my Iphone! Check it out…
Breakfasts have been simple. Almond milk yogurt and iced coffee. This almond milk yogurt is surprisingly amazing! I’ve been experimenting with giving up dairy again but have been loving yogurt lately so this was a perfect replacement. Plus it’s not packed with sugar like most other dairy free yogurts. It’s sweetened with fruit!
The only downside is there is only 3 grams of protein in it which I realized after eating my first yogurt and being hungry only an hour or two later. Lesson learned that eggs will always be my favorite breakfast.
Snacks have been simple as of late…
Banana with almond butter
Meals have been an attempt at getting in extra veggies to make up for the holidays…
Rice noodles, veggies, edamame, and hemp seeds
Butternut squash, roasted potatoes, and carrots.
Spaghetti squash, tomatoes, and spinach
Last but not least I have to share that Sophie started off the New Year in style yesterday! We had a great family filled day and I hope everyone else had a great start to their new year as well!

Sophie’s little sweater is adorable! I really want to give that yogurt a try….too bad it doesn’t have much protein. I’ve been trying to up my veggie intake too.
I know if only it had more protein it would be perfect!
I can’t believe I haven’t had spaghetti squash since last year – I need to change that!
One of my favourite recent meals was homemade pizza last night.

Awesome! Sometimes we just need some rest time!
So got me craving for butternut squash mash now! And I love edamame beans, they have such a lovely subtle crunch.

I’m dying over Sophie’s little sweater, such a cutie pie. I’m totally intrigued by that almond milk yogurt now! Sounds super interesting. Your meals all sound super good and nutrient packed! Wahoo. I was so lazy yesterday ha, it was awful.

Hello~ I was wondering if you had any thoughts or suggestions or could help me figure some things out. I have always done strictly cardio and know have started crossfit too. I can’t quite figure out what is going on with my body, I have been really bloated lately and seem to retain water easily. Can not eating enough calories for the workouts make you retain water. I seem to eat around 1200-1300 calories a day and sometimes, I know this is bad but it may be less on random busy days. I just started reading Whole 30 book about cortisol and such and wondering if this is what is happening.

That meal with the sweet tater is so simple yet so delicious!! I love all of those foods. Seriously the best meals to me are the easiest to make with just a few simple ingredients!

I totally drooled over that spaghetti squash pic you put up on IG. I miss spaghetti squash, I had some in Florida with fish and mixed veggies, still dreaming of that meal!
I will need to look for that brand of almond milk yogurt. Been looking for a brand to try that isn’t so high in sugars.

So Delicious makes an almond milk yogurt that has added pea/rice protein…i buy the plain and add a little stevia (though i’ve seen other flavors)…it’s pretty good!

awww! I love Sophie’s sweater. I tried coconut milk yogurt and almond milk yogurt for breakfast, but it left me starving!! Eggs are my favorite breakfast right now too!
Yes it tasted great but I was so hungry!
I would love to try that yogurt, especially on the days when I follow a vegan diet. It is unfortunate, however, that it does not have much protein

My day yesterday was filled with cleaning up after my sick boys so my eats were few and far between with no photos. So I skipped this weeks WIAW but enjoyed reading about your healthy eats!
