Happy Wednesday! Welcome back to another What I ate Wednesday! Hosted by Jenn over at Peas and Crayons. Last week I shared with you my prep from the week so this I thought I’d do something similar and share my prep as well as a couple meals from my past week…
As usual my weekly prep included lots of veggies and protein. If I don’t cook veggies ahead I just won’t eat them. It’s a fact!
Breakfast has been beyond simple lately. I usually just have iced coffee with almond milk and either a piece of fruit or a pure bar. I haven’t been hungry in the mornings but like to get something in my system to get my metabolism going.
This cranberry orange pure bar is my new favorite.
Lunches, dinners, and snacks have all blended together and tend to be pretty similar…
Please tell me I am not the only person who snacks on turkey meatballs and veggies?!
Shrimp stir fry with pineapple and sprinkled with sesame seeds.
Turkey meatballs with tomatoes, zucchini, basil, and spaghetti squash. My new favorite meal.
Turkey meatloaf, roasted carrots, and broccoli with bell pepper, red pepper flakes, oregano, and basil.

Everything looks soooo delish!! Did I miss out a recipe for turkey meatballs??
Nope it’s coming up soon in the next couple weeks! I can email it over to you if you like beforehand though. It’s super simple!
Love the spaghetti squash/turkey meatballl combo! Best thing I’ve eaten so far this week would have to be the oat/egg white pancake…..the best thing is always the sweetest with this huge sweet tooth I have!
I really want to try that pancake now after seeing it on your blog!
haha you’re not alone on snacking – i snack on whatever is in the fridge! and i love batching cooking, washing, slicing, dicing, whatever my veggies ahead of time – makes life SO much easier!
I agree. If I don’t cook my veggies ahead I just won’t eat them!
The best thing I’ve eaten all week is pulled pork. I’m never really hungry in the morning either. It takes me a little while to wake up I think

The best thing I ate this week was a spaghetti squash lasagna from work.

I love meatballs! Though, I eat vegetarian “meatballs.” I really don’t think that you can tell the difference. They are delicious!
I bet you can’t when I was vegetarian there were so many great swaps!
I made some roasted brussels sprouts last night that were really good! I eat them all the time, but not always doused with worcestershire sauce prior to roasting . . . . mmmmm . . . . so good! And the Barramundi that other night totally hit the spot.

Ahh I need to eat more stirfries with prawns. And pineapple! Looks like such a good meal. I love adding fruit into dinner

I have never tried these pure bars but I think I should! I need to make your turkey meatloaf because it looks so good!

I keep a container of baked chicken in my fridge that I periodically dip into throughout the day… and baby carrots and cherry tomatoes always seem to find their way into my mouth too

You are definitely NOT the only person who snacks on turkey meatballs and veggies! I am a SLAVE to spaghetti squash and every time I am even the tiniest bit hungry, in the fridge I am… chowing down! LOL!

u put my weekly prep to shame! i really need to spice up the variety lol ..last night i made orange cranberry wheat muffins (little snack-size baby ones) and clean eating chicken salad.. i also cooked up enough quinoa for the next three days and got my fruits and veggies in order… i need to start making some more creative mini-meals! i think i’m going to whip together some egg muffins tonight, so that’s a start

The spaghetti and turkey sausage combo is a simple but delicious one! I would make a big batch of that for the week and have it each day for lunch… might just do it for school!

Oh baby that shrimp! I wanna dive into it! I totally snack on meat, I mentioned this to Sam of Better With Sprinkles recently when she had a cold chicken snack in her WIAW. I too don’t have much of an appetite in the morning and stick to coffee and a piece of fruit. That Pure bar sounds so good, I’d love to crumble it into Cho or pudding for a nighttime snack

I almost bought some pure bars today but have yet to try them so got scared I wouldn’t like them. Are they good? Similar to any other bars?
They are great. Definitely try them. They’re similar to Lara bars but have a bit more protein!
I’m addicted to the blueberry Pure bars!! love those things!

I LOVE spaghetti squash with pasta sauce and turkey meatballs! And adding the veggies is just a bonus…yum!! I actually made chicken meatballs the other day, just as yummy.
