Happy Wednesday! Welcome back to another What I ate Wednesday. Hosted by Jenn over at Peas and Crayons. This month we are celebrating with health holiday recipes so every week I’m going to share a couple of my favorite recipes for the holidays! I’m also sharing some of my meals from the past few days.

Breakfasts have featured none other than lots of eggs. Nothing different for me…
Eggs with coconut oil and a small pear from Trader Joe’s (these are the perfect size ever)
Eggs, coconut oil, and roasted veggies. Veggies for breakfast…who am I???
Snacks have typically been a shake post workout but I did try out this bar one day and loved it! Not quite Paleo but still contains awesome ingredients. They’re also gluten free, high protein, and organic!
A lot of my meals have been super simple and on the go between work, workouts, and quick meals at home…
Spicy chicken with spinach and red pepper. This was eaten cold in my car after CrossFit on the way to work and was still perfect!
Roasted veggies with Parmesan. My favorite way to eat them!
Boringest dinner ever. Lean grass fed burger, small pear, and kabocha squash.
My packed work dinner. Grassfed burger, baby carrots, and an apple. May not be the most environmentally friendly but I think I should advertise for ziploc

I’ve never heard of a Perfect Foods Bar (and a lite version too!). You say they’re good? I’ll keep my eye out for it.
All your meals always look so well balanced and delicious to me! Delicious!
The bars are great! The regular ones are pretty high in calorie so a great once in a while meal replacement on the go but the lite is a great snack!
throwing tons of raw veggies together for a salad is probably my favorite way to get loads of veggies in!! but any veggies are awesome roasted!

I need to roast some veggies and have them in the fridge for breakfast. I was just thinking this morning that I need to eat veggies for breakfast too. Blah.
Hahaha I know I never eat veggies for breakfast. Why ruin the eggs with them

I do too! Spinach is actually my favorite veggie!

Cold spicy chicken DOES sound perfect. I seriously like cold meals a lot better than I like warm ones, especially when they’ve been sitting in the fridge for a day or so and all the flavours mesh together perfectly
It was so good and I really wasn’t thinking it would be all that good cold!
Roasted veggies are the best…that or salads

Hehe, your Dinner looks so tiny in that picture. Mmm…spicy chicken sounds good right about now! I’ve been craving more chicken lately, which almost never happens!
It wasn’t a very pretty dinner! I very rarely crave chicken either but this spicy kind is my favorite!
This would be a lean and fit world if everyone food prepped like you! Nice!

Wow, thanks for sharing those recipes at the end, I need to check out the pumpkin risotto and non-cream creamy spinach. I use a ton of Ziplocs too haha. I am not into the whole reusable cloth bags that I’ve been seeing on the blog world, although I did see one ADORABLE printed one on LifesABowl.com!

Hehe sometimes boring meals are a must! Not all meals canbe all singing and dancing. I’m loving veggie soups at the moment, so warm and comforting!

Those bars look awesome- I’ve never heard of them before! I went and checked out their website + ingredients and I LOVE how they’re not date-based! I’ll have to keep my eye out for them!

I’m a huge fan of Perfect Foods bars! Have you tried the peanut butter flavor? SO good. I’ve made friends with the sales rep who samples them at my Whole Foods on what seems like a weekly basis. He always hands me 5-6 bite-size pieces, which is about the equivalent of half a bar.
Everything looks so good, Danielle! I’d love to try the Paleo Pumpkin Risotto! I’ve been known to pack entire meals in ziploc bags too; sometimes it’s the only way to go!
