Happy Wednesday! Welcome back to another What I ate Wednesday! Hosted by Jenn over at Peas and Crayons! My meals haven’t been too crazy or exciting lately as I’ve been lacking some creativity in the cooking department, but I’ve still been making an effort to get in plenty of veggies and make sure I’m fueling myself adequately for CrossFit! Here’s a look at what I’ve been eating this past week:

Sometimes with squash and cinnamon as a pre-workout meal.
Snacks have been my favorite meals of the day as usual….
Apple slices with cinnamon, drizzle of peanut butter and apple juice sweetened dried cranberries.
Lara bar with an apple.
Lunches and dinners have been your typical protein, veggie, fat combo!
Roasted turkey. Butternut squash with cinnamon. Goat Cheese.
Chicken breast and stir fry veggies with coconut oil and coconut aminos.
Work Dinner and snack. Burger. Carrot sticks. Apple. Whey protein and almond breeze.
Last but not least, a picture of Sophie after her visit to the groomers on Monday! Isn’t she beautiful?!

The apple snack plate looks delicious–and simple. Nice! I also like the addition of goat cheese to the turkey and cinnamon squash. Great combo!

You really can’t! It’s my breakfast pretty much every morning!

I HAVE to try cooking my eggs in coconut oil. Actually, I’m going to do that right now. I just bought coconut oil spray. Perfect timing.

How do you get the PB to drizzle like that? Do you thin in out with something?
No it was just trader joe’s creamy unsalted. It’s so good and the only ingredient is peanuts!

And loooove your apple, PB, cranberry combo. I’ve done something similar but with AB and raisins instead – definitely one of the best ways to enjoy apples

Mmmm your meals sound great. I love goat’s cheese with anything and coconut oil is my new best friend! It can jazz up any boring meal. I love using it to roast veggies. Have a great day

I cannot find any cranberries that aren’t sweetened with sugar. Ugh. Sophie looks adorable as usual!!
I get mine at whole foods! It’s the only place I can find them.
That stir-fry looks awesome. I love stir-fries since they are so easy to make and incorporate so many awesome veggies!
So far this Wednesday I have had avocado and salsa toast, an organic golden delicious apple, and a banana! It’s starting out good.
