What I Ate Wednesday

Happy Wednesday! Welcome back to another What I ate Wednesday! Hosted by Jenn over at Peas and Crayons!

Today I’m keeping it simple and sharing some recent meals from the past week or so! Breakfasts and snacks have looked pretty much the same but I’ve been trying to switch up my lunches and dinners a bit!

Breakfast has been the usual eggs and coconut oil combo but when I’m extra hungry I’ll add in a banana with almond butter too.

Post workout is simple. Just whey and water. I never remember to take the picture until I’m home! There’s no way to make it look pretty anyway.

Lunches and dinner have varied but I’ve been try to follow the standard protein, veggie, starchy veggi combo…

Lean burger on spinach with kaboocha squash. My eyes were way bigger than my stomach only ended up eating 1/2 the squash.

Spicy chicken with peppers, spinach, and carrots. Roasted potatoes on the side.

The chicken made for perfect leftovers for lunch the next day!

Yep! I bought the organic grass fed patties from Trader Joe’s and then just cook them on the grill pan! Super easy.

I try to do the same with the protein, veg, and starch combo. It’s funny how people think you don’t eat any carbs with paleo. I actually eat a lot of carbs. Maybe too many sweet potatoes and squash! Your whole day looks so balanced and delicious :)

Super easy! I bought Applegate Farms Southwestern chicken strips and cooked them in a skillet with a little olive oil, bell peppers, spinach, and carrots!

Your roasted potatoes look perfectly crispy! With all the sweet potato love on blogs, I feel like white potatoes are often neglected. But they’re so good!

The best meal I ate this week was all you can eat sushi last night. I ate SO much haha.

I can’t function without my Blender Bottle! Leftovers for lunch are my favorite. Easy to do and good for you.

Cooking, cooking, cooking! Best meal all week…that’s hard but I guess I’d go with last nights chicken and gravy. Trying to get some gravy practice in before the big day!

I -wish- I could be celebrating Thanksgiving tomorrow. Canadian Thanksgiving was last month so it’s just another boring week up here, but at least there’s still delicious food to be eaten :D Best meal so far this week was probably the roasted potatoes and coconut chicken that my mom made for dinner on Sunday.

Kabocha! Ha. I got excited. I hope you have the best Thanksgiving tomorrow! Sadly, no Thanksgiving for us over in Canada. Those roasted potatoes look so yummy! And Sophie is obviously adorable!

The best thing I have eaten all week was probably roasted eggplant, tomato, and feta cheese stacks. So, so good!

Hmm it’s hard to figure out the best meal I ate all week. And that’s a good problem to have! Your chicken with veggies and potato meal looks so simple yet satisfying. I love having whole roasted potatoes. They’re so yummy but I always bake them instead! So when I have them roasted it feels special. I always have bigger eyes than my tummy when it comes to veg. The fiber sure is filling!

Aww I love your dog! So cute :) And I must try coconut oil and eggs, it sounds divine. Best meal I think was scrambled egg with pumpkin purée.

Yummy looking lunches and dinners! Especially the chicken and potatoes, my hubby would love that :) Best thing I’ve eaten lately would be my breakfasts since they’ve been more “meals” than my snacky lunches and dinners… Thank goodness for pancakes!

I bake them at 400 in the olive for about 45 minutes. Before putting them in toss them with a tbs. of olive oil, sea salt, and pepper! I’m sure it will work :)
