Happy Wednesday! Welcome back to another What I ate Wednesday! Hosted by Jenn over at Peas and Crayons!

Breakfast is back to the usual:

Eggs in coconut oil. Excuse the ugly paper plate.
Pre WOD snack of apple slices with cinnamon and apple juice sweetened cranberries.
I’ve been traveling with this bag of chopped organic carrot sticks in my bag. Quick and easy snack.
Lunches and dinners have been veggie packed too…
Lentils, spinach, and organic roasted potatoes.
Sweet potato veggie and black bean soup. Recipe coming soon.
Eggs and kale with organic grass fed butter.
Roasted veggie bowl with chili powder, red pepper flakes, and hemp seeds.
And just because you haven’t seen her in a while here’s Sophie! She’s getting so big!
Happy Wednesday! Looking for tips! What’s your favorite way to eat your leafy greens? No matter what I try I just don’t love them!

Everything looks so good as always! I love spinach in eggs. My favorite! And I love Sophie, she’s SO cute!!

I guess I’m a bit boring with leafy greens….90% of the time I just use them as a salad base. Otherwise, for kale I’ll make a massaged salad (changes the texture a bit and tastes great–there’s a recipe on my blog), or kale chips if I want something crunchy. Every once in a while, I’ll saute kale or Swiss chard directly into a red sauce or Indian type dish, or after sautéing it with a little lemon juice and pepper, top it with some fish.
I do like kale chips! That kale with lemon juice and pepper sounds great too! Thanks for the tips!
I never used hemp seeds before but I have a million sample packs laying around my house! I definitely need to get on that! Sophie is adorable. Her and Hunter would get along so well! They are both white and fluffy! (:

The sweet potato veggie and black bean soup sounds delic- all lot of my favorites in one hearty bowl, yum! I’ve always liked fruits and veggies, strange but true, so a big salad bowl is one of my favorite ways to eat leafy greens… But my hubby doesn’t agree as much so about once a week I’ll make a batch of sauteed spinach + bell peppers + onions + chicken sausage that he has no problem scarfing down
That sauteed spinach and chicken sausage mix sounds great! Spinach is actually my favorite leafy green!
I love topping my leafy greens with nutritional yeast!

I’m having serious issues getting them in, but they tend to upset my stomach if I eat too many so I blame it on that. And for leafy greens, I usually just use them in a salad, but you can try putting them into a smoothie?
I definitely take advantage of putting greens in my smoothie! Totally hides the taste!
That sweet potato and black bean soup looks so good – that’s one of my favourite flavour pairings!
I like to eat kale as massaged salads! I have a recipe for one massaged with olive oil and balsamic vinegar on my blog. I also like to use it in stir fries and frittatas!

Looks like you’re doing pretty good with getting the veggies in! I need to take me a baggie full of carrot slices to snack. I like to increase my green intake by finely chopping up spinach and adding it to my scrambled or egg omelet in the morning…..or even for dinner.

My favorite way to get greens… wither in a spicy soup or blended into a smoothie/ice cream creation. You can taste spinach at all!

I want all of your food!!! I stir my spinach into my soups, cook it in eggs, and throw it in smoothies. I rarely eat a salad in the colder months!
I’m not the biggest salad fan either! I’ve been loving veggies in soups lately though!

This is going to sound gross and may even turn in you off more but… I LOVE spinach and ketchup lol!!! I just grab a raw bunch of spinach, squirt ketchup (sugar free, of course) on the bunch and shove it in my mouth!!! I eat like a whole one pound bag of spinach in a sitting that way… And I am also getting nutrients through the ketchup too!
Hahaha that’s too funny! Unfortunately I don’t like ketchup otherwise sounds like the perfect way to mask the greens
