Happy Wednesday! We’re halfway through the week! It’s a new month which means a new theme for What I Ate Wednesday! Big thanks to Jenn for hosting every week!

Breakfasts have been different which is shocking for me! I tend to eat the same thing over and over for breakfast but lately I’ve been trying out some different things!
Siggi’s yogurt with blueberries and raw granola
Eggs with coconut oil and spinach. Apple on the side.
A protein muffin with almond butter.
For other meals I’ve been really making an effort to increase my veggie intake! Here’s some options I’ve been having:

Awwwww, all looks so delicious! How do you do it that your eggs look so nice? Mine are a messy disaster! I usually throw a handful spinach into every meal no matter if there are already veggies or not.
Haha not quite sure! Although I do only take pictures of the ones that come out nice! I promise some are disasters!
Everything looks delicious, as always. I will be honest… I was quite shocked not to see a whole page worth of eggs haha.
I love a salad filled with a ridiculous amount of vegetables.

I try to increase my veggies all the time. Usually that means throwing a handful of spinach in whatever I’m making. I’m not creative at all! I also eat the same things over and over again. Hello paleo pancake. I like routine
I love spinach too! It’s the one veggie I’m okay with adding to everything! I’m such a creature of habit too! Nothing wrong with that

Loving the Justin’s Vanilla Almond Butter, just wish they sold it at more than Whole Foods!!!! Eggs+coconut oil+greens is always a good choice. My favorite way to eat veggies is paired alondside some source of protein, usually chicken or eggs. Favorite meal egg/kale omelet paired with chicken sausage and salsa!

I could definitely take a lesson from you when it comes to varying up my breakfasts and trying to get more veggies in. I’ve been eating the same yogurt mess breakfast for months now, and when it comes to veggies? Eeep! I’m slacking! BUT… in my defense… I just don’t crave them as much in the winter, and honestly… I find that my stomach is a lot happier without so many veggies. I still do love my baby carrots and cherry tomatoes though
This was the first week I’ve had anything other than eggs for breakfast in a long time! I tend to get stuck in routine with my meals! I’m not a huge fan of veggies either to be honest! I do love some baby carrots though!
My fav way to eat veggies is definitely roasted. Yum! Those veggie tacos look so yummy.

mmm the protein muffin with almond butter looks so good! I just bought Justin’s Maple Almond Butter for the first time this week I haven’t tried it yet though but I’m pretty excited to! I’ve also been trying to up my veggies lately I feel like I really got off track with that!

I am a BIG veggie puree gal and love soups. I basically make my protein shakes and add tons of greens so I get a ton of greens in a tasty treat! I also juice at least once a day which takes about 3 servings of veggies to make one juice! Have you tried juicing? Love and Shine CourtStar

I roast veggies, sautee them and steam them. Then I just serve them with some meat. Meat + veggies is my basic easy meal plan. I also have a bunch of Moosewood cookbooks from my vegetarian days that I love! They’re full of creative vegetarian dishes for every meal and occasion and vegetables are the star of the dishes. I totally recommend these cookbooks – my favorite is the original. I also find that vegetables make perfect soups.

Your eggs make me hungry!! lol I love my veggies in soup in the fall/winter. In the warmer months I so lots of smoothies with spinach and salads!

I love Siggi’s yogurt! It was actually the Greek yogurt that made me fall in love with Greek yogurt. I rarely buy it now because it’s so expensive, but it still holds a special place in my heart.
Everything looks delicious–especially that almond butter-topped protein muffin. I have a hard time digesting large amounts of vegetables (with the exception of leafy greens–I can eat cups and cups), so I usually cook mine really well and/or puree them into soups. I’ve also recently discovered Vega nutrition shakes, which are packed with vegetables. I love that I can satisfy 50% of many of my vitamin/mineral RDA’s/DRI’s in one swig!
Oh that sounds awesome! I didn’t know that about Vega! I’m going to have to try that! Does it taste good too?
