What I Ate Wednesday

Happy Wednesday!!! Today is What I ate Wednesday thanks to Jenn at Peas and Crayons! Happy Halloween too! I’ll be celebrating at work tonight… so nothing exciting for me but what are your plans for the evening??? Let’s catch up on some meals from the past week!

The Egg Obsession Continues…

2 eggs and a sunshine burger

Eggs, Spinach, and Quinoa

Made Lisa Lately’s Sunflower Protein Muffin and topped with with almond butter and sun butter! It was quick to make and perfect!

Plenty of work snacks have been packed for the week:

 Lara bar, apple, and superfood bites.

Apple, Strawberries, and one of my favorite Gluten Free Protein Bars!

Was inspired by Tina and took my banana and almond butter to go!

PROOF that I am eating my veggies too!

AppleGate Farms southwest  chicken strips, spinach, goat cheese and plantain chips on the side.

Apple slices with cinnamon, zucchini, eggs with spinach and sliced goat cheese.

Spaghetti squash veggie bowl with hemp seeds and goat cheese.

Plaintain chips look good! No plans for me tonight….that’s okay though. I’m sure I’ll have enough of Halloween at the school where I teach today. :)

hahaha oh no do you teach in elementary school?! The kids will be crazy! I don’t have exciting plans either! I’ve never been a huge halloween person!

I’m volunteering at my professor’s nutrition practice this evening, then probably coming home and doing some studying. Such a party animal over here hahaha.

Hahaha it’s ok! I’ll be working too! I’m totally no party animal either! Someone asked me what I was doing after work (at 10pm) and I told them going to bed lol! No crazy parties for me!

Suddenly I find myself craving some eggs ;) And no real plans for me tonight… I’ll be staying at home to hand out candy, but seeing as the weather is kind of nasty, I’m not even sure that we’ll be getting many kids. I guess that means I’ll just have to work my way through the candy stash while watching Halloween movies :D

Hi Danielle- How are the NuGo bars? I’ve been wanting to try them but a little hesistant? I’ve been obsessed with eggs too lately- even tried a friends new recipe for a chicken parmigiana omelet! Happy Halloween:)

Yum….I’m definitely going to try that Sunflower Protein Muffin! I’ll be out trick-or-treating with the kiddos. Here’s to hoping I can resist all of that candy. ;)

Your dog is SO CUTE! My dog at home will be a “rufferee” :) No huge plans tonight. Some halloween chili, mini hot dogs, and some scary movies for us! We celebrated with a costume party this past weekend.

My plans are to study for my huge anatomy test tomorrow. And then go out and celebrate at least a little bit. :) Taking your banana and nut butter on the go is such a smart idea!

Oh! Where did you find SLICED goat cheese? I never even knew it could be made to have a consistency so that it could be sliced! Love all the egg-ified meals! And that spaghetti squash bowl looks PERFECT! I’ve recently become obsessed with hemp seeds and have been adding them to everything! lol

No plans for me tonight…just work! Boo! (pun intended)

I got the sliced goat cheese at whole foods but I’ve found it at Trader Joe’s before too! It’s really good! I had to work last night too! We’ll have to celebrate tonight instead :)

Hmm.. I love protein muffins. Anything that tastes like dessert and is good for you too is okay in my book!

Your dog’s outfit is adorable. So many WIAW-ers got either their cats or dogs to dress up for Halloween, but I can guarantee you that neither my cat nor my dog would allow me to even put a hat on them. They’re no fun :P

Everything looks absolutely delicious, as always, Danielle! Whenever I read your WIAW posts, my mouth starts watering. I’m glad I haven’t had my bedtime snack yet. ;)

Plantain chips are a new-to-me discovery, and I’m head over heels in love. SO SO delicious! I love dunking them in guacamole and peanut butter!
