Just in time for the Fourth! Here is a really simple recipe for sweet potato fries! Swap them for regular fries and you will up the vitamin and nutrient content of your standard potato! Some other wonders of sweet potato:
- They are fiber rich…meaning they keep you full for longer
- They contain Vitamin A…excellent for vision
- They contain Vitamin C…great for you immune system
All you need is…
- 2 medium sweet potatoes
- 2 tbs. coconut oil
- 1/2-1 tbs. ground cinnamon
Preheat your oven to 400 degrees.
Wash and slice your sweet potatoes into rounds (keep the skin on it contains the good nutrients!).
Coat the potatoes in your coconut oil mix and sprinkle with the cinnamon.
~Use more or less cinnamon depending on your taste preference.
Bake for 25-30 minutes.
Cool and enjoy!

These fries are sweeter but if you wanted to make them savory swap the coconut oil for olive oil and sprinkle with salt and pepper in place of cinnamon!
