Super Easy Sweet Potato Fries

Just in time for the Fourth! Here is a really simple recipe for sweet potato fries! Swap them for regular fries and you will up the vitamin and nutrient content of your standard potato! Some other wonders of sweet potato:

  • They are fiber rich…meaning they keep you full for longer
  • They contain Vitamin A…excellent for vision
  • They contain Vitamin C…great for you immune system

All you need is…

  • 2 medium sweet potatoes
  • 2 tbs. coconut oil
  • 1/2-1 tbs. ground cinnamon

Preheat your oven to 400 degrees.

Wash and slice your sweet potatoes into rounds (keep the skin on it contains the good nutrients!).

Coat the potatoes in your coconut oil mix and sprinkle with the cinnamon.

~Use more or less cinnamon depending on your taste preference.

Bake for 25-30 minutes.

Cool and enjoy!

What do you prefer sweet or savory foods? 

These fries are sweeter but if you wanted to make them savory swap the coconut oil for olive oil and sprinkle with salt and pepper in place of cinnamon!

Mmm! Sweet potato fries are my favorite! I love them sweet and savory, and often make half a batch of each, so that I can enjoy both at the same time. :) I’ve never tried baking them with coconut oil though—great idea! :)

I know I love sweet potato fries too…so much more than regular ones just cause they have so much more flavor! The coconut oil adds and awesome extra flavor to them! Have a great Sunday!
