Strawberry Coconut Chocolate Chip Mousse (Paleo and Gluten Free)

by danielle on February 12, 2013

Today I have one more Valentine’s Day recipe to share with you. The only reason I’m calling it a Valentine’s recipe is because it’s pink. That counts right?! This recipe is Paleo and gluten free and makes a great treat. It is also a good dairy free swap for things like frozen yogurt or plain yogurt. The coconut milk takes time to refrigerate so plan on starting this recipe a day before you eat it. You have to refrigerate the coconut milk the night before. Hope you enjoy it!

It’s so neat how refrigerating coconut milk makes it thick and creamy like this – I really want to try it!

My favourite Valentine’s Day treat are caramel Hershey’s kisses. :D

I’m not usually a fan of coconut milk, but the thought of combining it with strawberries sounds heavenly. What a great idea for valentines Day!

How very Valentine’s Day themed! I love it :) .

My favorite Valentine’s Day treat is the Reese’s Peanut Butter Cup Hearts. For some reason, the seasonal-shaped Reese’s (hearts, trees, pumpkins, etc.) are just SO much better. I swear they have twice as much peanut butter in them :) .

An awesome valentine’s treat! I think I’d rather have this and your wonderful chocolate filled raspberries than champagne. ;)

I wonder if you could use dates instead of the sugar? I am a sucker for Dove dark chocolate hearts. I can eat the whole bag.

danielle February 13, 2013 at 1:34 pm

Yes definitely! You probably don’t even need the sugar too because the strawberries add sweetness! I’d try it without!
