Perfect Fit Vanilla Cupcakes

A couple weeks ago we celebrated National Chocolate Cupcake Day! Well today is National Vanilla Cupcake day and I couldn’t not celebrate! I wanted to give you an easy recipe that you can put together in minutes and will taste just as good as a vanilla cupcake! I was inspired by the Tone It Up ladies to create a recipe using my Perfect Fit Protein which I have been loving lately! It cooks perfect and works just as awesome in smoothies. Plus it’s Organic, Raw, Gluten Free, and only 70 calories in a serving! Good enough for me!

Vanilla Mug Cake

Ingredients: 

  • 2 tbs. Perfect Fit Protein (or any protein of choice)
  • 1 tbs. ground flaxseed
  • 1 egg
  • 2 tbs. unsweetened vanilla almond breeze
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. baking powder

Directions: 

  1. In a microwave safe mug sprayed with olive oil spray, combine all of your ingredients and mix well.
  2. Microwave on high 2-3 minutes until cooked.
  3. Top with almond butter (I used Justin’s Vanilla) and organic sprinkles!

I might try this with my Sunwarrior protein….it looks good! Might the calorie count be off though? An egg by itself is 70 calories…..just wondering. In any case, I like the quick and easy method with healthy ingredients. Thanks!

Sorry if it was confusing! The protein itself is 70 calories for a serving! I was just talking about the protein and not the cupcake yet! If only the whole cupcake was 70 calories! I’d be beside myself ;)

I’ve yet to make my own mug cake, but they seriously do sound like a perfect snack. And I love how you put sprinkles on top :D Sprinkles definitely make everything 100x better.

Awww…..man! I’m out of protein or I would be having this for breakfast. I’ve been wanting to give that particular protein a try….I love that it only has 70 calories.

I actually really love it and it tastes awesome! I love that it’s raw, vegan, and gluten free too! Definitely give it a try it’s totally worth it!

I’ve tried various mug cakes in the past and, while they are always delicious, mine have never been as ‘fluffy’ as yours! I can’t wait to try this!

I’ve tried perfect fit too. It’s really good and tastes almost identical to Sun Warrior in flavor.

Yummy! That is perfect, so quick and easy! How long do you guess does it have to cook in the oven. I don’t have a microwave (I know that’s weird but microwaves are not often seen around here:-))

Hmm! Maybe like 10-15 minutes. Funny you don’t have microwaves there! They’re actually not supposed to be very good for us to use! You’re better off with the oven :)

HOLY MOLY that is the most adorable little meal I have ever seen!!!!! You have just convinced me that I need to buy Perfectly Fit. I actually want to create and sell my own protein powder!!! I need to create a line of nutrition products ASAP… Just gotta figure out how to do that first, lol!!!

I really just love that Perfectly Fit is made with PEA PROTEIN! I don’t believe in Whey or Casein or Soy… So this is brilliant! I wish it were sold in stores, although, the Tone It Up ladies live down the road from me! ;) I should just knock on their door and ask if I can “borrow” a cup of Perfectly Fit, lol!

I tried this with About Time Birthday Cake protein. I didn’t have ground flax, so I used cornmeal. It was actually pretty good!
