Peppermint Chocolate Cupcake for One

Since it’s the middle of November I figure I need to slow down with the pumpkin recipes but I can’t promise that peppermint and gingerbread won’t replace it! Here’s your first peppermint recipe of the season! I love the chocolate peppermint combination so expect to see a lot more soon! This recipe is super simple and is the perfect dessert when you need a sweet treat!

Peppermint chocolate mug cake

Ingredients: 

  • 1 tbs. coconut flour
  • 1 tbs. cocoa powder
  • 1 tbs. enjoy life chocolate chips
  • 1/2 tbs. coconut sugar
  • 1/2 tsp. baking powder
  • 1/4 tsp. pure peppermint extract
  • 2 large egg whites
  • 1 tbs. applesauce

Directions:

  1.  In a microwave safe mug sprayed with olive oil mix together your coconut flour, cocoa, chocolate chips, coconut sugar, and baking powder.
  2. Next mix in your extract, egg whites, and applesauce. Mix well.
  3. Bake in your microwave 3-4 minutes on high.
  4. Flip your mug upside down to pop out your cupcake!

Aaah, need to try that after my detox! Looks delicious! I am still with pumpkin. I restocked my kitchen with cooked and packed pumpkin to make sure I can eat my smoothies for a few weeks longer :-)

I can’t choose between those three flavours – I love them all! Peppermint + chocolate has a special place in my heart though, so this mug cake looks awesome!

I’m secretly (or not so secretly) really happy that pumpkin is starting to disappear, and I think the chocolate and peppermint combination is a perfect replacement :D This little mug cake sounds delicious!

I LOVE this recipe!! It looks so easy and so yummy….I think I just may make this for dessert tonight. I don’t know if I can pick a favorite, but I definitely eat more pumpkin then the other two.

I’m so excited for the new season of peppermint and gingerbread! Even though I still love my pumpkin, I love these ingredients equally as much! I can’t eat chocolate, which makes me sad but peppermint is still good regardless!

I have just never been a peppermint person….like, at all! I wish I was, though! :( So choosing between the three of those is pretty easy: pumpkin! Especially if it is in the form of pumpkin butter :) .

Wow, this looks great! I love how you have to “stop” yourself from posting about pumpkin haha, I totally prefer it over peppermint so keep it up if you wish! However this recipe looks great. I love gingerbread! I’d like to make it and put pureed pumpkin on top.

Mmm, I love microwave cupcakes, and think this sounds like a fun holiday spin! I’m definitely a pumpkin girl, however I actually love eggnog most! Eggnog ice cream, eggnog tea, eggnog coconut milk…bring it on! It’s a draw between peppermint and gingerbread! xoxo

Ha Ha! :) I am going to have to say my favorite flavor is most certainly pumpkin, followed by gingerbread and then peppermint, although I do love me some peppermint chocolate (I could never eat chocolate alone back when I ate it)…..
