Paleo Zucchini Fries

I’m all about convenience and sneaking in my veggies on the go! My busy schedule has left me grabbing a lot of meals straight from my fridge and throwing them in a bag with me to go to work! This makes vegetable eating aside from baby carrots, rather difficult for me because I am not a fan of raw veggies! I came up with one simple solution that is even good cold and packs super easy! Zucchini Fries! Now these taste nothing like french fries but they are still delicious and get me eating some more vegetables….which is really all that matters! Try them out!

Paleo Zucchini Fries

Ingredients: 

  • 2 medium Zucchini or Summer Squash
  • 1/2 cup almond meal
  • 1 egg white
  • Olive oil spray

Directions:

  1. Preheat your oven to 400 degrees.
  2. Slice your zucchini lengthwise into thin strips.
  3. Dip your slices into 1 egg white to coat and then immediately into the 1/2 cup of almond meal.
  4. Lightly coat the “fries” with almond meal.
  5. Spread onto a baking sheet sprayed with olive oil spray, careful not to overlap your fries.
  6. Spray the tops of your fries with olive oil spray.
  7. Bake for about 30 minutes until the zucchini is fully cooked.
  8. Pack up and enjoy!

I love raw veggies! Stupid question: what’s the difference between almond meal and almond flour?

Never a stupid question! There’s not much of a difference but almond flour is often finer and more of a flour texture than almond meal. They’re pretty interchangeable though! Most packages often say almond flour/meal!

I prefer raw veggies over boiled veggies. I love, LOVE baked/roasted/broiled veggies whatever they are.

YUM.. love zuchini and have yet to get almond meal (the price totally turns me off on it, ha) but I am sure the combo is great! I also love raw veggies and love them in dips – greek yogurt or hummus :) HAPPY FRIDAY!

Love raw veggies in salads or in some kind of dip, but I definitely prefer roasted. I’ve made these exact zucchini sticks before….love them!

I love raw vegetables. Especially mushrooms actually! I love the texture and flavor..my bf thinks I am so weird haha. Alos, they are the BEST dipped in hummus!

I only like some raw veggies, I think I prefer everything roasted though! Otherwise it seems hard for my stomach to digest everything, probably because I eat so many of them!

Yummy! I really need to try cooking with almond meal. I always see it at TJ’s and get curious. I love raw veggies! I packed some raw carrots for work yesterday to dip into hummus.

We have a microwave at work so this is a real go-to for me and I use a variety of vegetables, but broccoli is my favorite and so easy just to cut the florettes off a head in the morning before work:

Cut chunks of raw vegetables into a microwave-safe container and sprinkle with Mrs. Dash Garlic & Herb. Store in fridge until ready to prepare.

At mealtime, add a few Tbsp water to container and put the lid loosely on the container. Microwave for 2 to 3 minutes (depending on thickness of vegetables). Drain when done. Delicious steamed veggies ready to eat!

Mmm this is a good one too Danielle and plus roasted veggies are way better if you ask me. While I do like raw, I get crazy stomach aches from excess amounts, which it seems doesn’t take much these days!
