Paleo Snickerdoodle Cake Cookies

by danielle on December 4, 2012

Today is National Cookie Day. With so many cookies to choose from how do I decide what to make? This idea came from my sister who has quite the opinion on cookies so I accepted her challenge. These are 100% paleo, easy to make, and perfectly cinnamony. They’re a cakey texture in cookie form….hence the name! Enjoy!

paleo snickerdoodles

Ingredients:

  • 1 cup almond flour
  • 1/4 cup arrowroot flour
  • 1/4 cup coconut sugar
  • 1/4 tsp. xanthan gum
  • 1/2 tsp. baking powder
  • 2 tsp. cinnamon
  • 2 tsp. vanilla extract
  • 3 eggs
  • 1/4 cup melted coconut oil

Directions:

  1. Preheat your oven to 350 degrees.
  2. In a mixing bowl combine your flours, sugar, xanthan gum, baking powder, and cinnamon. Mix well.
  3. Next add in your vanilla, eggs, and the coconut oil, melted.
  4. Mix your ingredients well.
  5. Drop your mixture onto a well greased cookie sheet by the tablespoonful. Your batter will be thin but they will only spread slightly.
  6. Sprinkle the tops of the cookies with a little coconut sugar and cinnamon.
  7. Bake for 8-10 until the outsides start to crisp.

Makes 14 cookies

*Little tip: These cookies tend to stick so make sure you use enough oil on your cookie sheet.

Yumm! I will receive Xanthan Gum from Jessie soon, then I will try these! Can I replace the almond and arrowroot flour by coconut flour?

Perfect! I wouldn’t replace all of it with coconut flour because they will be really dry. Maybe a brown rice flour instead?

I’ve never tried snickerdoodle cookies but I’m very intrigued! I think my favourite is oat and raisin as they’re so chewey and you can pretend they’re healthy hehe :)

Hahaha well they do have raisins! I’d call them healthy ;)

I’ve actually never had snickerdoodle cookies before! These look great though – I love that they have a cakey texture.

My favourite cookies are my mom’s chocolate chip ones. They are the perfect blend of chewy and crispy!

These look so delicious and cake-like. I much prefer cake-y cookies over chewy… and yo can never go wrong with cinnamon!

Favorite cookie?! Eeee! It’s impossible to pick! I really love snickerdoodles, but I’d have to say that a good classic chocolate chip oatmeal would probably be my favorite.

Totally agree! anything with chocolate has to be good :)

Wow, those look awesome. I love snickerdoodle cookies! My favorite cookies, though, are most definitely anything that has to do with peanut butter!

I can’t believe I’ve never tried snickerdoodles before. I feel like such a non foodie saying this. I don’t think I can really choose a favorite cookie, I’m more of a muffin gal. I’d say classic chocolate chip would always be my favorite!

So funny! I’m not a huge cookie fan either but totally agree with you on the muffins :)

How awesome and they look so easy to make :) Nice! What could I use instead of arrowroot? Would corn starch work, do you think?

Reply

danielle December 4, 2012 at 5:54 pm

Yes arrowroot is a Paleo sub for cornstarch!

Snickerdoodles have always been a favorite cookie of mine! When I was young, they were my absolute favorite…until I discovered the chocolate + peanut butter combination. ;) However, when it comes to simple and satisfying, you really can’t beat a snickerdoodle. Plus, I love the name! ;) I’m excited to see a Paleo cookie recipe. I have all the ingredients on hand, so I might try making a batch this weekend!

danielle December 5, 2012 at 3:05 pm

Yay! I hope you like them! I love that they are packed with cinnamon but you are right…nothing beats chocolate and pb!
