So here’s the final recipe in my paleo “rice” collection! In case you missed my other recipes you can find them here and here!
Today we’re going with classic risotto with an Italian theme! In case you missed my previous posts, I’m not actually using rice to make these recipes! You can find out how to make cauliflower rice here! This recipe is quick and easy and will only take minutes to make! Serve with protein on the side and you have a complete meal! Little tip: you can store pre riced cauliflower in your refrigerator to have on hand when you need a quick meal!
Ingredients:
- 4 cups cauliflower “rice”
- 2 cups spinach
- 2 cups chopped cherry tomatoes
- 1/4 cup fresh basil
- 1 tbs. olive oil
- 1 cup light (canned) coconut milk
- pepper
Directions:
- Heat a skillet with 1 tbs. of olive oil and add in your spinach, tomatoes, and “rice” saute 3-4 minutes until cooked.
- Add in your coconut milk and pepper to taste and cook for 2 minutes longer.
- Lastly sprinkle in 1 tbs. arrowroot starch (this will thicken the mix), mix and let simmer over low heat 1-2 minutes more.
- Enjoy!

Love the rice bowls! I used to eat things like this all the time with regular rice before I started paleo. I love how easy it is to prepare and it is all in one bowl!

Does it make me a bad foodie if I had to Google it to find out what it really was? I have cooked rice in coconut milk though, so that kind of counts, right?
Hahaha I think that totally counts! I don’t know that I’ve ever really had it either! Maybe tasted it once!
I still need to make some of this. It looks so good. Broccoli upsets my stomach so I am a little wary off cauliflower because I don’t know if it has the same effect.
Hmm paleo mac and cheese would be nice.

I keep saying I’m going to make cauliflower rice but I keep forgetting! I’m a huge fan of meals that cook up fast so I will DEFINITELY have to remember to make this soon!
