Paleo in Minutes: Creamy Spinach

The task of creating Paleo meals can at times seem daunting! Who has time to cook and bake such extravagant replacements all the time for your non-paleo favorites?! I’m going to start featuring some quick and easy Paleo recipes that can be made in minutes on the blog! Kicking things off right with a veggie mix! This makes the perfect side dish for any meal or top it with some protein for a complete Paleo meal!

Paleo Creamy Spinach

Ingredients: 

  • 3 cups organic frozen spinach
  • 2/3 cup light canned coconut milk
  • 1/2 6 oz can tomato paste
  • 2 tbs. pine nuts

Directions:

  1. Spray a skillet with olive oil and saute your spinach until it begins to defrost over medium to high heat.
  2. Turn your heat down to low-medium and add in the coconut milk and tomato paste.
  3. Cooke everything together stirring occasionally 2-3 minutes longer.
  4. Top with your pine nuts and enjoy!

YUM! I feel like eggs are my go-to because they’re super easy and fast. This morning I cooked them in coconut oil for the first time – LOVED it!! Random question – how come you used canned coconut milk? Is it thicker than the regular stuff that comes in a carton?

Yay! I love that you enjoyed the eggs and coconut oil! It’s a favorite of mine! Canned coconut milk is much thicker than regular! You don’t have to refrigerate it you just open the can stir and go!

This sounds GREAT!! I love me some spinach! I love making the banana omelet, it’s super easy just a banana, 2-3 eggs, stevia and cinnamon. Mix together and cook like an omelet! I’m actually enjoying one right now as I type…ahhhh bliss

I LOVE pine nuts and spinach..what a great combo!! awesome side dish. My favorite thing to throw together is chicken with veggies and make a stir fry, and the spicier the better :)

Hmmm usually when I’m alone with my sister we just make a pasta dish lol but if I’m completely on my own, I usually go for soup– always fast, soup and toast :)

I’ve been all about the quick meals lately. I usually have some baked chicken in the fridge, so if I’m really in a pinch then I’ll cube some up, toss it in a salad with some feta and olive oil, and have that alongside something like a grilled cheese sandwich.

Doing a full Paleo meal can seem daunting. When I’m short on time (or energy or inspiration) I usually throw together some peppers and sausage with a can of diced tomatoes and some spices.

My favorite quick food to make is typically some sort of quesadilla. Throw some cheese in a ww wrap with some garden basil, tomatoes and black beans and Im good to go!
