Paleo in Minutes: Antioxidant Packed “Ice Cream”

I’m back with another Paleo in minutes meal! One of the things I always crave when I am eating strict Paleo is frozen yogurt! This treat is enough to put off my cravings with something else cold and sweet! Plus it has way more vitamins and minerals, including antioxidants, than your average frozen yogurt! It literally takes less than 2 minutes to make!

Paleo Ice Cream

Ingredients: 

  • 1/2 sliced frozen banana
  • 1/4 cup frozen blueberries
  • 1/2 cup frozen spinach
  • 1 cup light canned coconut milk (I love Trader Joe’s brand)

Directions:

  1. Only 1 step! Blend all your ingredients in a blender! Top with crushed freeze dried fruit and enjoy!!!

I agree–any type of berry is awesome. I’ve recently become hooked on goji berries though . . . maybe because I had never had them before? But I can’t get enough!

It’s usually near the soups and sauces I think! They have it some weeks and other times they don’t! I guess you just have to go at the right time! Whole Foods and most regular supermarkets always have it though!

Blueberries! I miss my fresh summer blueberries! At least pumpkin helps me cope a little….haha. What is coconut milk like? Would almond milk make a good replacement or is the coconut milk more thick/creamy?

Almond milk could definitely be a replacement. You are right though coconut milk is a bit thicker!

I need to start using more coconut milk in my smoothies – I love that stuff! And I’d have to say that blueberries are probably my favorite antioxidant rich fruit. I couldn’t get enough of the fresh ones in the summer, and now I’m doing my best to satisfy the craving with frozen ones, but it’s just not the same…

I love blueberries too and they’re so good in the summer! I do like the frozen ones too! Sometimes I’ll snack on them frozen topped with a little almond milk!

My favorite antioxident fruit is blueberries…but lately I can’t seem to get enough raisins! Definitely need to make sure I don’t loose control with that craving because they can be so high in sugar, even though it’s natural.
