National Pancake Day is tomorrow September 26th! I’m celebrating a day early so you have a super easy and Paleo pancake recipe to follow tomorrow morning to celebrate with!!!
Ingredients:
- 2 tbs. coconut flour
- 2 tbs. flax
- 1 tbs. unsweetened shredded coconut flakes
- 1/2 tsp. baking powder
- 2 egg whites
- 2 tbs. applesauce (unsweetened)
- 1/4 cup unsweetened vanilla almond breeze
Directions:
- In a medium size bowl combine all of your dry ingredients (coconut flour and flakes, flax, and baking powder).
- Next add in your egg whites and applesauce.
- Slowly add in your almond milk. The batter will still be pretty thick.
- Heat a skillet and spray with coconut or olive oil.
- Drop your pancakes into 3 medium sized cakes on your skillet.
- Cook on each side until golden.
- Serve with toppings of your choice! I did more unsweetened coconut flakes, sliced almonds, and a drizzle of honey!
Makes 3 Medium Pancakes (one serving)!

- Fat: 11.5 grams

Absolutely! Maybe just double the flax in place of the coconut flakes!

Neither- I always pick french toast! Haha, but honestly I do love pancakes and waffles too. Especially with bananas in the batter and topped with peanut butter and syrup. Yuuummm.

National pancake day is tomorrow? Thanks for the heads up! I never pay attention and always end up missing all sorts of foodie holidays, but now I might just have to celebrate. I have to admit that I tend to like waffles over pancakes though. There’s just something about the crisp exterior and fluffy interior that gets me. Add a little bit of maple syrup and almond butter, and I’m sold

Hmm… Probably pancakes for me! However, I’m the most impatient pancake person ever. I just cannot sit there and wait. I end up flipping them a hundred times! These look great. I bet you could use coconut milk instead of the almond milk to make them extra coconutty
