Paleo Coconut Flax Pancakes

by danielle on September 25, 2012

National Pancake Day is tomorrow September 26th! I’m celebrating a day early so you have a super easy and Paleo pancake recipe to follow tomorrow morning to celebrate with!!!

Paleo Pancakes

Ingredients:

  • 2 tbs. coconut flour
  • 2 tbs. flax
  • 1 tbs. unsweetened shredded coconut flakes
  • 1/2 tsp. baking powder
  • 2 egg whites
  • 2 tbs. applesauce (unsweetened)
  • 1/4 cup unsweetened vanilla almond breeze

Directions:

  1. In a medium size bowl combine all of your dry ingredients (coconut flour and flakes, flax, and baking powder).
  2. Next add in your egg whites and applesauce.
  3. Slowly add in your almond milk. The batter will still be pretty thick.
  4. Heat a skillet and spray with coconut or olive oil.
  5. Drop your pancakes into 3 medium sized cakes on your skillet.
  6. Cook on each side until golden.
  7. Serve with toppings of your choice! I did more unsweetened coconut flakes, sliced almonds, and a drizzle of honey!

Makes 3 Medium Pancakes (one serving)!

Yay pancakes! I’ll have to try these. Think they’ll turn out okay without the coconut flakes?

danielle September 25, 2012 at 1:42 pm

Absolutely! Maybe just double the flax in place of the coconut flakes!

Thanks Linz! The applesauce definitely gives them some extra moisture! Hope you like them!

Honestly, I don’t think I can choose which one I like better. It all depends on my mood that day. I love jam or pb though on top of either :)

Reply

danielle September 25, 2012 at 1:45 pm

I love PB on top of anything ;)

I am a waffle girl, pancakes just don’t do it for me for some reason. I like the fluffyness of waffles

Reply

danielle September 25, 2012 at 1:45 pm

I don’t discriminate! I’m happy with either!

Neither- I always pick french toast! Haha, but honestly I do love pancakes and waffles too. Especially with bananas in the batter and topped with peanut butter and syrup. Yuuummm.

National pancake day is tomorrow? Thanks for the heads up! I never pay attention and always end up missing all sorts of foodie holidays, but now I might just have to celebrate. I have to admit that I tend to like waffles over pancakes though. There’s just something about the crisp exterior and fluffy interior that gets me. Add a little bit of maple syrup and almond butter, and I’m sold :D

Reply

danielle September 25, 2012 at 3:58 pm

You must celebrate! All this talk about waffles is making me want one!

Reply

Ali September 25, 2012 at 5:28 pm

Kristen@Change of Pace September 25, 2012 at 6:35 pm

Hmm… Probably pancakes for me! However, I’m the most impatient pancake person ever. I just cannot sit there and wait. I end up flipping them a hundred times! These look great. I bet you could use coconut milk instead of the almond milk to make them extra coconutty :)

Reply

danielle September 26, 2012 at 4:32 pm

Haha I have the same problem and I still end up burning them! I like the idea of adding coconut milk! Sounds great!

Oo! I’ve been loving all the different paleo pancake recipes lately, but I haven’t seen one with flax AND coconut yet! Do you think I could sub the applesauce for pumpkin?

Reply

danielle September 26, 2012 at 4:33 pm

Absolutely that would be so good! Still trying to create a good pumpkin pancake recipe!
