National Pumpkin Day!

Happy National Pumpkin Day! I could not let today pass by without celebrating so I am sharing some of my pumpkin recipes as well as some of my favorites of all of yours! Not only is pumpkin delicious it is also chock full of vitamins and minerals. Pumpkin has high amounts of Vitamin A, C, fiber, potassium, zinc, and magnesium. Even the seeds are good for you! They are full of healthy fats (essential fatty acids to be exact) and protein!!!

Oh boy–it’s way to hard to narrow this down to one favorite pumpkin recipe . . . . but the pumpkin chili I posted about yesterday was pretty darn good. Last week, I made a pumpkin/cauliflower soup–that was excellent. And a couple of weeks ago, I made a protein pumpkin bread. It was on the healthier side, but it worked for me! I want to try making one of the cookie recipes you posted next. I need a pumpkin dessert next!

I love how you have these National Food Days, we don’t have anything like that in Australia! But I totally made pumpkin pancakes for breakfast this morning, they would have to be my current favourite pumpkin recipe for sure ;) Can’t wait to try some of yours!

Great post and such a big choice of delicious recipes, thank you! I am eating right now Paleo Pumpkin Oatless Oatmeal which is really good. And I love the Pumpkin Protein Chocolate Chips Bars you created!

How did I not know it was national pumpkin day?? Now I feel terrible for not incorporating pumpkin into my day so far. I was even going too for a premorning snack, but decided against it. Oh well :)

You are so good at keeping up with all of the food holidays! I’m planning a pumpkin round-up, but it will just have to be on a random day….;) Love pumpkin, but you already knew that! I think my favorite pumpkin recipe so far was my oat pumpkin chocolate chip cookies. I still have your Paleo pumpkin chocolate chip bars on my “to make” list….maybe this weekend.

I didn’t know it was National pumpkin Day (is there a day for everything?!) but I celebrated unintentionally with my pumpkin TVP oats for breakfast! Great round up. I’m so typical, but I do love pumpkin.

I think I’m one of the only bloggers who isn’t -crazy- about pumpkin. I enjoy it on occasion, but I don’t think I’d say that I full out love it. You won’t see me turning down a slice of chocolate chip pumpkin loaf, though :D

oh god, why is pumpkin so good?? I love fall. My favorite pumpkin products are pumpkin butter and pumpkin spice granola from trader joes. As for recipe: theres too many to choose! love em.

I love the round up! I like practically anything with pumpkin! Two of my favorite pumpkin recipes have been pumpkin no oat oatmeal and pumpkin pie protein smoothies! I can’t wait to try your pumpkin chocolate chip protein bars and paleo pumpkin mug cake; they both look delicious!
