Meals in Minutes: Pumpkin Spice Chia Pudding!

So I’ve recently discovered this….

…and I might just be obsessed! It totally reminds me of pumpkin eggnog but I can’t decide if that sounds good or gross! Just trust me that it is amazing and I have been trying to use it in as much as possible! My favorite is putting a splash into my coffee but recently I experimented with this recipe and came up with the easiest dessert ever!

Pumpkin Spice Chia Pudding
Ingredients:

  • 1/2 cup pumpkin spice coconut milk
  • 1 tbs. chia seeds
  • dash of cinnamon
  • dash of pumpkin pie spice
  • packet of stevia (optional)

Directions: 

  1. Mix all your ingredients in a bowl, mixing well.
  2. Refrigerate at least 4 hours before serving.
  3. Done! It’s that easy. Serve with toppings of your choice!

What’s the quickest recipe you’ve ever made? This one takes awhile to set but literally took me 1 minute to put together!

Chocolate chips would be my topping of choice as well :D And do bananas dipped in melted chocolate and put in the freezer to set count as a recipe? Because that would probably be one of the quickest ones I’ve ever made.

Oh gosh. I need that coconut milk. Coconut and pumpkin are obviously two of my favorite things!! I definitely am the queen of making fast meals…umm like just greek yogurt with fruit and a little nut butter. That’s pretty fast ha. Or just microwave muffins.

I’m in LOVE with the pumpkin spice coconut milk! In fact, I gush about it in tomorrow’s blog post. I still have half a carton left, so I’ll definitely be trying out this pudding. Yum!

The quickest recipe I’ve ever made? Hmm…not sure, but lately I’ve been obsessed with mixing PB2 and no sugar added vanilla coconut milk ice cream. The result is instant peanut butter ice cream!
