Ingredients:
~1/3 c. Canned coconut milk (unsweetened)
~1/4 tsp. coconut or almond extract
~4 Strawberries, chopped
~1/2 tbs. Slivered almonds
~1/2 tbs. Shredded unsweetened coconut
Directions:
Stir the 1/3 cup coconut milk and leave it in the refrigerator overnight. To use it should be the consistency of cool whip. In a large bowl, whip the coconut milk and extract on high until fluffy. In a dish layer the chopped strawberries, “yogurt”, almonds and coconut. *This is not super sweet, if you are okay with it and want it to be sweeter add a little bit of stevia to the coconut milk mixture.

Makes 1 serving
Optional Serve with sliced banana

This might sound weird but I’m going to the chiropractor today and I find it pretty marvelous because my neck and back have been hurting and they won’t be once I leave there today! I’m not going to lie…my favorite way to eat strawberries is chocolate dipped:)

Awesome parfait. I don’t eat coconut very much cause it sometimes makes my face flush (allergic? overly sensitive? Not sure) but it’s cool that you are able to use it as a sub for greek yogurt to make parfaits. I dont think i’d be able to give up my greek yogurt, I love it too much, but I’m sure in turn you feel so much better cutting out dairy.
Hmm you must have a sensitivity. You could totally make this with Greek yogurt too. I love yogurt too actually and will usually flip flop between using it and not! I love it too much

Mmm, I love anything made with coconut milk! This parfait looks amazing! I had no idea you could whip it to a fluffy consistency, but I guess it acts similarly to cream.
