Marvelous in my Monday!

Happy Monday! Celebrating Marvelous in My Monday thanks to Katie. Nothing too exciting happening for me this Monday but I do have a lot of great links from last week to share.

As usual groceries for the week were bought on Saturday and meals prepped on Sunday. I only post one grocery trip every week but I usually end up stopping in the middle to the end of the week for a few extras so today I have both to share.

Saturday’s trip included: Quinoa, cashews, baby spinach, zucchini, bell pepper, goat cheese, black beans, grapefruit, avocado, lime, unsweetened almond breeze, Greek yogurt, kale, eggs, and sweet potatoes.

This past Thursday I went to get a few extra vegetables to get me through the week including: Greek yogurt, goat cheese, coconut milk, bell pepper, grape tomatoes, zucchini, crushed tomatoes, kidney beans, spaghetti squash, and baby spinach.

Finally I got everything prepped and ready to go for the week, including a lot of recipes I was trying out for the blog.

Spaghetti squash bake, roasted chicken, sweet potato fries, grapefruit salad, kale for kale chips, and a sweet potato black bean mix.

Sophie also got a haircut this weekend. She came home complete with bows. She got a big trim too because the snow is knotting her fur. Poor girl!

When you pre-make your sweet potato fries, do you just cut them up and then cook them right before you eat them? Or do you cook them and reheat them? I always have a problem with reheated sweet potatoes getting a bit soggy and mushy :( .

I usually cook them and reheat them but you’re right they’re definitely not as good!

Hey Katie. For the sweet potato fries I slice them and soak them in water for 30 minutes (it gets rid of some of the starch) Them bake at 400 for 30-40 minutes.

I know I’ve said this before, but I could really use your assistance with meal prep! If I lived in Boston, I’d hire you to do it for me. ;) Until that day comes (or we both live in sunny California), I’ll continue to admire your organization!

I used to meal prep a lot on weekends and it always did make things so much easier during the week. I need to get in that habit again. Luckily it’s not too bad with working from home, but still love being able to toss things together without that extra prep every day.

Once again I’m so impressed by all your meal prep! It must be awesome to have so many of your meals already made throughout the week.

It’s a pretty low key week for me, but I’m planning to get together with some friends on Friday to cook a vegan dinner and practice interviewing together in preparation for our internship interviews. I’m looking forward to it!

Can’t wait to see your spaghetti squash bake! I love sweet potato fries with coconut oil but never think to leave the skin on. I should since I’m sure they are good for you!

Absolutely leave the skin on. As with most fruits and vegetables the skin has a lot of nutrients!
