Marvelous in My Monday!

Happy Monday! Celebrating Marvelous in My Monday thanks to Katie! Celebrating all things marvelous today with some link love, recipe recaps, and a grocery haul! I’m taking a much needed day off to catch up on things and am very happy to celebrate Monday today!

This weeks grocery haul was nothing out of the ordinary:

Apples, plantain chips, raw granola, baby spinach, spaghetti squash, siggi’s yogurt, zucchini, blueberries, eggs, coconut milk grapes, unsweetened vanilla almond breeze, applegate farms grilled chicken strips, rice cakes and pumpkin coconut milk.

I did manage to find a couple great new things…

Hail Merry Raw, Vegan, and Gluten Free Granola! In two awesome flavors, orange cranberry, and blueberry lemon.

Sophie is adorable!!! That pumpkin spice almond milk looks so good I wish we could get it here in Switzerland.

I meal prepped a spaghetti squash yesterday, too! I love spaghetti squashes but I do hate how long they take to prepare! Yay for meal prep!

Awwwr Sophie is just so huggable and fluffy! Love her :D And I’d have to say that the most marvelous thing that ended up happening this weekend was meeting a guy in Starbucks and talking for a few hours :D Woop!

Question: How do you like that siggi yogurt? They actually carry it out here, well a couple flavors. It’s very expensive, but maybe it’s worth the $$??

Thanks Katie! I tried the pumpkin spice coconut milk in my coffee and it was awesome! Not quite sure about drinking it plain though! Might be too sweet!

Umm that coconut milk? Sounds freakin amazing!! I would add that to just about everything haha. And love me some spaghetti squash. ALWAYS a part of my food prep. I use it in more ways that I thought. Happy Marvelous Monday!

I just got the mint chocolate coconut milk by So Delicious and it’s amazing! Now I’ve gotta find the pumpkin flavor! I think both would be great for adding into baked goods.

Mmm, those muffins look PERFECT! So big and fluffy!

I haven’t tried the pumpkin flavor, but I bought the egg nog version of that coconut milk last year…it was good, but just too sweet for me. I never tried it in coffee though…I bet that would work! Might have to give that a try!

I’m so proud of myself for doing some meal prepping this weekend too (totally unlike me), it’s made packing my lunches for the week SO much easier!
