Homemade Veggie Burgers

by danielle on November 11, 2012

For a long time throughout college I was a vegetarian. One of the things I struggled with was actually eating enough veggies and getting enough protein as a vegetarian so veggie burgers were the ideal food for me because they combined vegetables and protein, plus they tasted great! I later learned how bad some of these burgers loaded with processed soy were, but some of my favorites, such as Sunshine burgers were still great and packed with healthy ingredients. Here is a recipe I modeled after my favorite sunshine burgers with a little extra protein boost from the quinoa! Try them out for some extra plant power!

Homemade veggie burgers

Ingredients:

  • 1 cup cooked quinoa
  • 1/2 large zucchini
  • 15 roasted baby carrots
  • 1/4 cup sunflower seeds
  • 1 tbs. fresh basil
  • 1/4 tsp. sage

Directions:

  1. Preheat your oven to 350 degrees.
  2. In a food processor combine your zucchini and pre roasted carrots and pulse until combined.
  3. Add in your sunflower seeds and continue to blend.
  4. Lastly add in your quinoa, basil, and sage and continue to blend.
  5. Once your mixture is fully combined roll into 6 patties and place on a baking sheet sprayed with olive oil.
  6. Bake for 20 minutes.
  7. Remove from the oven and flip and cook another 20 minutes.
  8. Let cool and enjoy!

Yum! I’ve been experimenting with homemade veggie burgers lately… we don’t have one particular “go-go” recipe, I’ll have to try these. They look delicious!

I’m all about sage right now. These sound fabulous!

My favorite veggie protein right now is lentils. They are so warming in the winter!

So funny I just cooked a bunch of lentils last night to have on hand for the week!

Love the ingredients in these! I ate a fair share of veggie burgers when I went veggie too, but the fact that they were so heavily processed definitely began to skeeve me out. And I love that these are made with quinoa, because that’s my favorite plant based protein source :D

Thanks Amanda! I tend to shy away from the heavily processed veggie burgers too! That artificial soy is just scary!

I was a vegetarian in college too, but an unhealthy one! I lived on pizza. I love the fact that these have quinoa in them…never thought of putting that in a veggie burger!

I wasn’t a very healthy vegetarian either! I rarely touched a vegetable!

Yum this looks and sounds delicious! Just pinned it and will have to try it sometime.

I don’t usually cook but lately have been trying my hand at it. The crock pot has been my friend lately.

Yum! I love quinoa, and am always looking for some veggie burger ideas!! I love that these are super easy and not super processed like basically all pre packaged veggie burgers, and soy free makes my tummy happy!

These look so good! My favorite plant-based protein sources would have to be quinoa, lentils, and chickpeas…I am obsessed with them all!! And let me just say, it is so fun to be obsessed with HEALTHY foods! :)

I love pea protein or rice bran protein. Typically I take these things and mix them in eggs to make pancakes! :)

Nice post. I wish Sunshine burgers were sold near me :(
Wondering if you ever post photos of you? I find it helps to relate to HLB if I can actually see them, if that makes sense!
Anyway, nice blog.
