Grain Free Apple Pie

The fall recipes have begun! As sad as I am that it is starting to get cooler out and summer is ending! I am very excited about all the fall flavors I can now use, particularly pumpkin and apples! Apples are easily my favorite fruit! I have one every day without question! They are also packed full of nutrients including fiber and are rich in antioxidants! Make sure you eat the skin though, that is where are the nutrients are!

Some of my favorite apple combos:

  • Green apple slices with coconut and cinnamon
  • Apple slices with almond butter or peanut butter and raisins
  • Apple slices with goat cheese
  • Apple slices with protein peanut butter dip (peanut flour, protein, and almond milk)

When I think of fall I think of apple pie! Although I am not a huge fan of this dessert, I still wanted to make a Paleo version! So here is your grain free apple pie recipe, 100% Paleo and Dairy and Gluten Free! Enjoy!

Ingredients: 

  • 1 tbs. coconut oil
  • 2 Green apples
  • 1/4 cup raisins
  • 1 tbs. lemon juice
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 2 tbs. coconut crystals (or another sugar substitute)
  • 1 cup almond meal or flour
  • 1 egg and 1 yolk
  • 1 tbs. coconut oil

Directions:

  1. Chop your apples into thin slices and place in a skillet over medium heat with a tbs. of coconut oil.
  2. Saute the apples for 2-3 minutes and preheat your oven to 350 degrees.
  3. Add in your lemon juice, raisins, spices, and coconut crystals and continue to saute over medium to low heat 5-8 minutes more.
  4. Remove your mixture from the skillet and pour into a greased 6 inch round baking pan.
  5. In a separate bowl combine the almond meal, 1 whole egg and tbs. of coconut oil to create a batter.
  6. Drop your batter on top of the apple mixture and spread over the apples.
  7. Lastly brush your egg yolk over the top and sprinkle with cinnamon
  8. Bake for 25-30 minutes at 350 degrees.

Note: This is a smaller size pie that makes 2-4 small servings. If you want to bake in a normal pie pan simply double the recipe!

I so, so love this! I’m pretty sure this will be my dessert at Thanksgiving. Apples are one of my favorite fruits too and honey crisp are the best!

this look good! I love apples and I am hoping to go apple picking this weekend :) . My favorite fall thing to bake is cranberry apple crisp, which we always have at Thanksgiving!

My favourite fall dessert includes pumpkin of course:)
I actually don’t like cooked apples! I have no idea why, just never have. I’m attempting to like them this Fall though ha ha.

This is a very tasty and delicious dessert! I gotta try this and add this in my list of healthy dessert list. I just love sweets and I’m trying to get a healthy options to satisfy my cravings on sweets and I think this is a good addition to it. Not to mention apple is one very healthy fruit.
