Gingerbread Cake for One

Before I share with you my recipe for today I had to show you this video. My sister is always sending me messages on facebook of things she finds online. They are usually recipe related but the other day it was this video and I just have to share it! Any Bruno Mars fans out there??? Any Little Mermaid fans??? If you have no idea where I’m going with this watch at 15:40 and you’ll figure it out.

Hope you loved that as much as Sophie and I did. She passed out on the couch next to me while I watched it! Love Bruno Mars. My sister and I saw him in concert a year ago and it was one of the best I’ve ever been to. PS his new CD is out today!

Okay enough of the randomness here’s your recipe:

I’ve been attempting to come up with a Paleo gingerbread cookie recipe for awhile now. While it hasn’t quite happened yet I did come up with this recipe in the process. This recipe does use molasses and while molasses isn’t 100% Paleo it is not the worst of sweeteners. In fact blackstrap molasses contains potassium, magnesium, and calcium.

I’ve also been very into these microwave cakes for one. They’re fairly easy to make, use simple ingredients, and only make one serving. It helps when you don’t have an entire gingerbread cake in your house for a week. If you want another serving you’re going to have to go back and bake it all over again. Never happens. So give this a try. Hopefully it curbs your gingerbread craving!

Gingerbread mug cake for one

Ingredients: 

  • 1 tbs. coconut flour
  • 1 tbs. almond flour
  • 1 tbs. coconut sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. ginger
  • 1/8 tsp. cinnamon
  • 1/8 tsp. allspice
  • 1/4 tsp. cloves
  • 1 tsp. vanilla
  • 2 egg whites
  • 1/2 tbs. blackstrap molasses
  • 1 tbs. unsweetened applesauce

Directions:

  1. Mix your flours, sugar, baking powder, and spices in a bowl.
  2. Add in your vanilla, egg whites, molasses, and applesauce, mixing well.
  3. Pour into a greased microwave safe mug and microwave on high 3-4 minutes.
  4. Enjoy!

I’ve been craving gingerbread too and trying to think up a gingerbread recipe. This cake looks like a great breakfast for tomorrow morning! The Little Mermaid is my favorite Disney movie….what a cute video!

I heard the Bruno Mars live-lounge on the radio. It was amazing! Very funny and random. Ahh gingerbread is so good. I love it when it’s soft in the middle and crunchy on the outside. Cool recipe!

As soon as I saw the title of this post, I got excited. Anything gingerbread, is totally up my alley. And I love the recipes “for one”. :)

Otherwise, I’m a huge fan of anything cinnamon, nutmeg and pecan around this time of year. Mmmmm . . .

Could some substitutions be made? For example:
- what could be alternatives to the molasses? would 2 egg whites be equivalent to 1/4 cup eggbeaters or just 3 tbsps or so? Could I use a packet of stevia if I don’t have the coconut sugar?

Oh, and can this be microwaved in any glass dish (No cover?) or ramekin? And what size of dish (one or two cup?). Thanks again. :)

Any substitutions you make are going to taste a bit different. You could swap the molasses for honey or agave but the flavor is going to change. Molasses is what gives it that gingerbread taste. Not sure on the egg beater conversion I would just use two eggs and remove the whites but it’s probably equal to 1/4 cup liquid egg whites. You can swap stevia if you like. I just used a large coffee mug sprayed with olive oil no cover on it!

Loving the simple ingredients in that cake :D I’m actually not the biggest fan of gingerbread, but I go kind of crazy for the chocolate/peppermint combo. You know those thin After Eight chocolates? Eee I used to be able to finish a whole sleeve of those no problem :lol:

No joke. I used to tell people when I was 4 mind you, that Ariel from the little mermaid was my Sister. This was before I knew cartoons were fake. Which is quite embarrassing. I seriously wanted to be her. Ha ha, oh gosh. Anyways, random tangent;) Love gingerbread, and I have to make this. I just made some gingerbread bars and they were pretty good! I need to make just a few little changes until they’re perfect.

I’m super excited to try this!! I absolutely love gingerbread, in fact, as soon as December 1st comes around, I get a really bad craving for it! A tradition in our family is making gingerbread cookies and reading the story every Christmas Eve. I just love it!
