Before I share with you my recipe for today I had to show you this video. My sister is always sending me messages on facebook of things she finds online. They are usually recipe related but the other day it was this video and I just have to share it! Any Bruno Mars fans out there??? Any Little Mermaid fans??? Okay enough of the randomness here’s your recipe:
I’ve been attempting to come up with a Paleo gingerbread cookie recipe for awhile now. While it hasn’t quite happened yet I did come up with this recipe in the process. This recipe does use molasses and while molasses isn’t 100% Paleo it is not the worst of sweeteners. In fact blackstrap molasses contains potassium, magnesium, and calcium.
I’ve also been very into these microwave cakes for one. They’re fairly easy to make, use simple ingredients, and only make one serving. It helps when you don’t have an entire gingerbread cake in your house for a week. If you want another serving you’re going to have to go back and bake it all over again. Never happens. So give this a try. Hopefully it curbs your gingerbread craving!
- 1 tbs. coconut flour
- 1 tbs. almond flour
- 1 tbs. coconut sugar
- 1/2 tsp. baking powder
- 1/2 tsp. ginger
- 1/8 tsp. cinnamon
- 1/8 tsp. allspice
- 1/4 tsp. cloves
- 1 tsp. vanilla
- 2 egg whites
- 1/2 tbs. blackstrap molasses
- 1 tbs. unsweetened applesauce
- Mix your flours, sugar, baking powder, and spices in a bowl.
- Add in your vanilla, egg whites, molasses, and applesauce, mixing well.
- Pour into a greased microwave safe mug and microwave on high 3-4 minutes.
