Dreaming of Hawaii Sweet Potatoes

I know a funny title for a post but here’s the problem: while I love all things pumpkin and fall fashion, I’m not so happy with the lack of sun and warm weather! I am already wanting to go on vacation to somewhere warm and not come back to Boston until June 1st! Anyone in Hawaii looking for a roommate?! This recipe is inspired by the summer flavors but combined with one of the heartier foods of Fall:  the sweet potato! It’s 100% Paleo if you eat sweet potatoes so enjoy! It’s also perfect as part of your post workout meal!

Pineapple Cinnamon and Coconut Sweet Potatoes! Tropical sweet potatoes

Ingredients: 

  • 2 medium sweet potatoes (precooked)
  • 1 red bell pepper
  • 1 cup pineapple chunks
  • 2 tsp. coconut oil
  • 1 tsp. cinnamon
  • salt & pepper

Directions: 

  1. Start by heating your 2 tsp. of coconut oil in a saute pan.
  2. Slice your bell pepper vertically into strips and dice your pineapple and sweet potato into small cubes.
  3. When the oil starts to sizzle a bit add in the bell pepper and cook 2-3 minutes.
  4. Next add in your pineapple and continue to cook 1 minute more.
  5. Lastly add in your sweet potato and saute 2-3 minutes longer adding in the cinnamon and seasoning with salt and pepper to your liking.

Makes 4-8 servings

This dish sounds fantastic! I love the creative combination of flavors. I know what you mean about getting tired of the cold… I was all gung-ho about Fall arriving, but after about a week of temperatures hovering around freezing, I think I’ve had enough – I want my warm weather back! I’d really love to go to Hawaii, but Greece and New Zealand are also on my list!

Thanks Amanda! I know the pumpkin is great but I’d be okay with some sun too! I bet Greece is beautiful! I’ve always wanted to go to Australia too!

oooh this is making me so hungry. I LOVE sweet potatoes, red bell peppers AND pineapple, but I have never thought to combine the three. Thanks for the recipe!

Thanks Katie! This one was actually kind of inspired by a whole foods hot bar combination but I changed around a bunch of the spices and ingredients!

Sweet potatoes are such a good staple this time of year. This recipe looks so good, I’d even have it for breakfast with eggs.

I’ll be your roommate in Hawaii! My bags are packed when yours are! ;-) Seriously though, it’s WAY too cold for October 7th! It hit 49 degrees today in DC. Brrrrr.

This recipe looks amazing! I love pineapple with anything, and since sweet potatoes are one of my all-time favorite foods, I know I’d love these!

What an awesome combination of flavours in this dish! I love using pineapple in savoury meals.

Ugh and I know what you mean about the cold weather. I love fall when it’s still somewhat warm, but I hate when the chill starts to set in! I would SO be in on a trip to Hawaii with you. ;) My dream place to travel is Italy though – I just want to go and eat all the fabulous food there!

I don’t typically post because I believe nutrition should be based on using clean ingredients and eating to satisfaction. No nutrition info necessary :)
