Cozy

by danielle on January 25, 2013

I’ve said it before and I’ll say it again, I hate the snow! Once the holidays end it seems like here in the Northeast we just have a long winter ahead of us  before summer comes (sorry if that’s depressing!). Every year without fail I get a case of the “winter blues”. There’s less sunlight, it’s cold, I spend less time outside…it’s just bound to happen. Now back in the old days this would lead me to do one of two things: Plan healthy meals, count calories, and obsess or way overdo it on cookies, sweets, or food that would just fill me up so my “diet” could start tomorrow. Essentially they both gave me a sense of comfort. They made me feel full and warm inside. I was in control or completely out of control and hating either side of it. Since these two things are no longer part of my life, I’ve learned to come up with other mechanisms to create the “cozy” feeling. Things like putting on my comfiest pair of sweatpants sitting on the couch and watching mindless TV. Or calling a friend or my mom. Reading a totally mindless magazine. Painting my nails and fixing my hair. Taking a nap. There are so many options! So next time you get that “blues” feeling and need a feeling of comfort I want you to find out what exactly can bring you a feeling of “cozy” other than food.

To warm you up a bit here’s a cozy recipe for homemade cocoa and dip to top it with. Now I know this seems counterintuitive, but if you do decide to make this to get that cozy feeling I want you to put it in a fancy mug, sit in a chair and drink it, without distractions! Promise me you’ll do that!

glutenfreehotcocoa

Ingredients:

  • 1 cup unsweetened vanilla almond breeze
  • 2 tbs. unsweetened cocoa powder
  • 1/2 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1 packet stevia

Directions:

  1. In a saucepan over low heat add in all of your ingredients, starting with the almond milk.
  2. Stir over low heat until everything begins to blend and the cocoa powder has dissolved.
  3. Continue to heat until warm and enjoy!

Makes 1 serving

This next recipe is the perfect topping for cocoa. The idea comes from my cousin who makes this as a dip for cookies but I personally think it is the perfect cocoa topping. Now remember, no eating this from the container with a spoon, standing up. Scoop out a portion, put it in your fancy cocoa mug, sit down and enjoy it. No guilt necessary!

candycanedip

Ingredients:

  • 1 tub of all natural whipped topping (I used Tru Whip)
  • 15 pieces all natural peppermint hard candies
  • organic red food coloring (optional)

Directions:

  1. Crush your peppermint hard candies.
  2. Mix into your whipped topping.
  3. Add in a drop or two of food coloring to make it pink.
  4. Top your cocoa!

Makes a ton of servings!

I’m definitely a pajama pants and tv kind of girl. When it’s cold outside one of my favorite things to do is snuggle with my kids on the couch in our jammies and watch movies. I know how you feel though with the weather after Christmas. It is one of the main reasons we moved to North Carolina.

I hate the cold too! I want summer to be here already haha. I stay cozy by curling up with a tea and blanket in front of the tv too. Also I like to cook myself lots of soups and stews in the winters!

Definitely feeling you on the winter blues, girlie. Now that the holidays are over and all of the anticipation of Christmas has died away, it’s like there’s nothing to look forward to anymore and all the cold and lack of sun is taking its toll. Curling up on the couch with a good book, baking, going out to grab a hot drink with friends, and snuggling up by the fireplace with some hot chocolate are all things that make me feel pretty cozy.

I’m loving both of these comforting recipes! Coconut milk hot chocolate has become a mainstay in my diet over the past week—I think I’ve had a cup every day. Have you tried adding a touch of full fat coconut milk? A little goes a long way, but it makes it super creamy! Also, I’m a huge TruWhip fan (it’s always in my fridge), so I’ll definitely be trying this dip recipe! Candycane hot cocoa? Yes, please!

Happy Friday, Danielle! <3

I totally get those winter blues too…there’s still just so much winter left!
One of my favorite things to do it just cozy up on the couch with a blanket and a funny show on the tv. It gets my mind off of the anxiety I feel about not being able to do anything fun outside (it’s 10 degrees out…) and just helps me relax!

Thank you so much for sharing that hot cocoa recipe. I have been known to just buy the mix, but would much rather make it with whole ingredients. Plus, I love that this uses almond milk so it is vegan. Awesome! :)

I HATE HATE HATE THE SNOW TOO!!! Tis why I moved to LOS ANGELES!! LOL! If it snows here, that means HELL froze over and Godizilla is coming to eat me! LOL! I used to competitively snowboard… IT RUINED ME in terms of liking snow and the cold! Now I won’t go snowboarding unless it’s 70 degrees! LOL!!!
