Chocolate Peanut Butter Cup and Banana Pancakes!

I try to forget about it but I have a weakness for chocolate and peanut butter! So when I was stuck on what my next recipe should be I immediately came up with an idea: something combining my two favorites in Paleo form! Now peanut butter is not Paleo but these pancakes could easily be made Paleo with an almond butter swap! Enough talking about it….enjoy your peanut butter and chocolate!

Chocolate Peanut butter and banana pancakes

Ingredients: 

  • 2 tbs. coconut flour
  • 1 tbs. flax
  • 1 tbs. unsweetened cocoa powder
  • 1/2 tsp. baking powder
  • 1 small banana
  • 2 egg whites
  • 1/4 cup unsweetened vanilla almond breeze
  • 1 tbs. sunspire natural peanut butter chips or for Paleo (1 tbs. almond butter)

Directions: 

  1. In a bowl combine your flax, coconut flour, cocoa powder, and baking powder making sure to rid the mix of any clumps from the cocoa powder.
  2. Add in 1/2 of your banana mashed, the egg whites and almond breeze and mix.
  3. Lastly add in your peanut butter chips or almond butter for Paleo.
  4. In a skillet sprayed with olive oil spray cook your pancakes making sure to flip and cook on both sides.
  5. Top your pancakes with the other half of the banana sliced and a drop of peanut butter!
  6. Dessert for Breakfast is Served!

Makes 1 serving (4 small to medium sized pancakes)

Danielle, these pancakes look delicious. I need to try them!! My favorite candy is chocolate as you know :-) Switzerland may not have so many healthy products as you have in the U.S. but they make definitely the best chocolate!!

Sometimes having a bit of peanut butter is absolutely necessary! And even though I do love almond butter, sometimes almond butter just won’t cut it. :)

Favorite candy? Oooo that’s a tough one! I love KitKat and Coffee Crisp… both taste sooo good with some warm coffee. And I love this time of year because you can get them in the mini Halloween versions, and let’s face it, everything tastes better when it’s mini.

These look phenomenal! Have not tried Paleo pancakes yet, I make protein pancakes every morning for breakfast and smother them in peanut butter. Will have to try these instead.

Peanut butter cups are so my favorite! So, your pancakes…definitely a favorite combination of mine! Do you know if using a different flour affects them at all? Like a whole wheat flour? Thanks Danielle!

Hmm…I don’t think the whole wheat flour would affect them too much because there’s not so much flour. You might just need to cut back the liquid a bit because coconut flour tends to soak up a lot of liquid!
