Chocolate Coconut Cream Pie

This recipe is pretty easy to make and is almost 100% paleo aside from Enjoy Life dairy free chocolate chips. Because today is National Mousse Day, I’m using my mousse recipe from yesterday to celebrate. I never would have thought making a pie could be a fairly simple process but this proved to be really easy and is actually one of my favorite recipes I’ve made in awhile. Hope you like it just as much as I did!

Ingredients: 

  • chocolate coffee mousse recipe (make it one day ahead)
  • 1 cup unsweetened coconut flakes
  • 1/2 cup almond flour
  • 1 tbs. coconut sugar
  • 1 egg
  • 1/4 cup melted coconut oil

Directions:

  1. Preheat your oven to 350 degrees.
  2. In a mixing bowl combine your coconut flakes, almond flour, and sugar.
  3. Next add in the egg and melted coconut oil and mix well.
  4. Spread your mixture into the bottom of a greased 8inch pie pan.
  5. Bake 12-15 minutes or until the edges start to brown.
  6. Let the crust cool completely about 1 hour.
  7. Spread your mousse in the pie crust and sprinkle with extra unsweetened coconut flakes.
  8. Serve and enjoy!

This post triggered my memory of a favorite pie from my childhood: French Silk pie from Baker’s Square! It was to die for. Also terrible for you, but I didn’t know it at the time. This would be a great replacement though if the craving were to strike!

I love how simple the ingredients are! And the pie looks absolutely delicious. I’d have to say that my favorite pie is probably chocolate or banana cream. But a good old fashioned apple hits the spot too, especially if vanilla ice cream is involved :D

I love a good peanut butter/ chocolate pie, but honestly I am going to have to say that pumpkin pie is probably my favorite! Yet another reason why I love this time of year :) .

Oh yum!! Coconut is my jam. Can you believe I’ve never never tried any sort of pie before?!? I’ve always been convinced I hate it, but I must admit this looks dang good.

This looks similiar to the chocolate pudding pies my mom used to make {which I love}, but way more healthier. My son always wants a chocolate pie for his b-day, I’ll have to make this for him for a special treat. Looks delish!
