
I love breakfast. It’s by far my favorite meal of the day and I often times would be happy to eat breakfast all day! When I have late night classes or don’t feel like cooking I tend to rely on breakfast foods to hold me over. Things like omelets, eggs, and pancakes are some of my go to options. These pancakes are a twist on one of my favorite microwave muffin recipes. They are almost Paleo and can easily be adapted to Paleo and are 100% gluten free. Try them out for breakfast or even dinner one night. They’re super easy to make!
Ingredients:
- 1 tbs. coconut flour
- 1 tbs. Perfect Fit protein (or any brown rice protein, you can also swap another tbs. of coconut flour to make these totally Paleo)
- 1 mashed banana
- 3 egg whites
- 1/2 tsp. baking powder
- 1 tsp. vanilla bean extract
- 1/2 a vanilla bean
- 1/2 tsp. stevia (optional)
Directions:
- In a mixing bowl combine your flour, protein, baking soda and stevia. Mix well.
- Add in your banana, egg whites, and vanilla extract and blend with a hand mixer until there are no lumps from the banana.
- Lastly scrape the bean from 1/2 a vanilla bean and stir into your batter.
- Cook the batter as pancakes on a skillet with coconut oil.

BREAKFAST – def my fav meal of the day!! I love pancakes and those vanilla bean ones look awesome. Is it weird I’ve never used a real vanilla bean? Just the extracts? Do you have to mash it to use it?
I just used my first one this summer. It’s really easy you just cut it open and scrape out the seeds!

My ideal breakfast for dinner would involve eggs, toast, and hashbrowns/breakfast potatoes. Oh, and maybe some fresh fruit thrown in there for good measure

I loveeee breakfast but usually just love breakfast time. We rarely have breakfast for dinner and if we do its a fritata or something. I am more of an omelet person then pancakes!

Breakfast is definitely the best meal of the day – in fact, I don’t think I’ve ever come across a person who thinks otherwise. Lately I’ve been craving big yogurt messes when it come to breakfast for dinner, but my ultimate comfort would have to be a big bowl of banana oatmeal with almond butter. Heavenly.

Mmmm…nothing better than banana pancakes! I’ve been trying to make some coconut flour recipes that are vegan friendly, but dang it’s hard to get right! Breakfast is my ultimate comfort meal! I’d be happy eating it for every meal everyday.

YUM!! Banana-coconut flour pancakes are my current favorite! I like adding protein powder as well, and sometimes completely replace the coconut flour, if I’m using them as a post-workout meal. The addition of vanilla sounds amazing! I’ll definitely have to give this a try!!
Breakfast is definitely my favorite meal–as long as I take time to prepare something! Many mornings, I grab hard-boiled eggs and a sweet potato (pre-baked) or cereal and yogurt, which isn’t so exciting.
However, on the mornings that I have time to make a great omelet or a stack of pancakes like these, I’m one happy girl.
I totally agree with you! I hate cooking in the morning but I do love any kind of breakfast! Making it ahead is key!
